And it was awesome.

No real measurements because that’s how i roll.

1 jar of pickle juice
About 1/2 cup almond flour
1/2 bag of pork rinds finely ground
1 egg
Baking powder. A tsp or two?
Garlic powder
Pepper
A few squirts of cholula

Mix it all together and dump your chicken thighs in. 4+ this made a lot of batter. It was really thick and I thought i messed it up but i smeared it all over the thighs as best i could. Place the thighs on a cookie sheet and pat the batter so it’s smooth and even.

Bake at 375 until dark, crispy, and done.

Bonus: i sliced some zucchini and battered that too. Baked up tasting just like fried pickles.
