Forget that mystery green mint jelly, full of sugar and who knows what else. Here’s a more delicious way to enjoy lamb with mint.
The ingredients are quite simple: ground lamb, fresh mint, fresh thyme, tallow (or other fat for frying), salt and pepper. You will also need skewers.
Finely chop a couple tablespoons of fresh mint
And pick off a couple tablespoons of fresh thyme leaves
Add herbs to a pound of ground lamb. Add salt and pepper, too.
Blend mixture very well, and split into four portions
Form long brochettes on the bamboo skewers. Place in refrigerator for one hour to chill.
Add a couple tablespoons of tallow (or other fat for frying), and get it smoking hot
Place chilled brochettes in the hot grease
When one side turns brown (about 3 minutes) turn brochettes to uncooked side. Continue until all sides are crispy brown (about 12 minutes cooking total)
Plating
The center of the brochettes remain juicy, while outside is crispy
