Quiche is a great way to eat Ham and Eggs, but usually the crust contains carbs … but you can make a quiche without any crust as long as you set it in the fridge after cooking it and before slicing it.

also called a Frittata. We make and eat a lot of them. Ingredients are whatever is on hand… usually spinach, goat cheese, and bacon.

I’ve made this twice and loved it both times. Today I changed it up just a bit, swapping out the ham for chorizo crumbled and fried, and Colby Jack cheese for the tasty cheese. It’s a nice twist on the crustless quiche if you tend towards spicier fare! If you haven’t had this recipe, give it a whirl. I cut it in eight pieces and freeze them wrapped in parchment paper and ziplocked for freshness, and they reheat very nicely.
