Creamy Salsa Chicken Casserole

Ingredients

  • 200ml Sour Cream
  • 300ml Thickened Cream
  • 375g Salsa
  • 150g Grated Tasty Cheddar Cheese
  • 800g Chicken Thighs

Tools

  • Large Saucepan
  • Medium Pot
  • Chopping Board
  • Forks (for shredding chicken)
  • Oven Proof Baking Dish
  • Measuring Cups or Kitchen Scales
  • Serving Spoon

Method

  1. Pre-heat oven to 180oC (355oF)
  2. Place chicken thighs in a pot of water and bring to a boil, then reduce heat and simmer until cooked (approximately 15 minutes)
  3. Remove chicken thighs from water, shred and set aside
  4. Combine sour cream, thickened cream and salsa in a saucepan over low heat
  5. Add shredded chicken and stir through
  6. Spoon mixture into an oven proof dish and sprinkle with grated cheese
  7. Place dish in oven until cheese melts
  8. Serve with sides of your choice

Glad you enjoyed it! :blush: Did you use regular cream or HWC? The U.S. equivalent of thickened cream is HWC.

I used HWC! That’s the only cream we keep in our house! :slight_smile:

I used google to translate grams to cups, but may have made some errors…

Yeah, it’s easy to do…come on over to the dark side with the rest of the world and go metric! :wink: Good point about the ml measurement to cups instead of fl.oz. it depends on your cup size as I think a U.S. cup is 235ml whereas a metric cup is 250ml. Either way about 1 + 1/4 cups of HWC and 3/4 cup of sour cream should do it. If you used those quantities, or thereabouts then all good!!
