112g softened (not melted) butter
56g softened (not melted) cream cheese
3T coconut flour
1/2-1t vanilla (or to taste)
1t-1T truvia (to taste or sweetener of choice)
28g lily’s dark baking chips (they’re sugar free )
- mix butter/cream cheese
- mix in vanilla (it won’t be smooth because of the moisture in the vanilla)
- mix in truvia (this will smooth it out a bit)
- mix in coconut flour (this will make it very doughy…resist the urge to add more coconut flour, doing so will make them chalky and dry…it’s super absorbent and takes a minute to pull the moisture)
- fold in choc chips
- use small cookie scoop or tsp and small spatula to portion out
- roll portions into balls on a small lined baking sheet (silicone mat or parchment paper)
- pop in fridge for undetermined amount of time…basically when you remember to transfer from baking sheet to storage device
- store in fridge
you will lick the bowl, they are good cold but also good a little room temp-ish
