Cookie dough fat bomb part deux

disclaimer:
i do grams, tsp/Tbsp, and/or “to taste”

112g softened (not melted) butter
56g softened (not melted) cream cheese
3T coconut flour
1/2-1t vanilla (or to taste)
1t-1T truvia (to taste or sweetener of choice)
28g lily’s dark baking chips (they’re sugar free :blush:)

  1. mix butter/cream cheese
  2. mix in vanilla (it won’t be smooth because of the moisture in the vanilla)
  3. mix in truvia (this will smooth it out a bit)
  4. mix in coconut flour (this will make it very doughy…resist the urge to add more coconut flour, doing so will make them chalky and dry…it’s super absorbent and takes a minute to pull the moisture)
  5. fold in choc chips
  6. use small cookie scoop or tsp and small spatula to portion out
  7. roll portions into balls on a small lined baking sheet (silicone mat or parchment paper)
  8. pop in fridge for undetermined amount of time…basically when you remember to transfer from baking sheet to storage device
  9. store in fridge

you will lick the bowl, they are good cold but also good a little room temp-ish

Baking them would make them melt into a mess. Ive made these and can attest they are very good!

i think without egg and baking powder/soda you’d just have melted butter with coconut flour all over the pan.
there are tons of keto chocolate chip recipes out there tho :slight_smile:

Thanks @mikki ! Made these tonight, they’re SUPER rich. I think these will be a great treat that won’t cause more cravings.

Here’s a pic of the cookies and the nutrition info when I entered it all into MFP (it yielded 36 mini cookie dough balls for me).

doubtful…i’ve only found them at hippy dippy stores (whole foods, sprouts, local “health food” store, etc)

once i bought carob chips for under $6 and the next time it suggested i “buy again” they were $14 for the same bag. i do miss carob a little…dang you high carb count!

The new grocery store in town (used to be Lowe’s) carries lilly’s brand chocolate. They probably have the chips.
