Cole slaw dressing

This one is husband approved and he usually hates coleslaw!

1/2 cup mayo
1/2 cup sour cream
Juice from half a lime
Zest from half a lime
Salt
Pepper
1/2 tsp Swerve or equivalent

Stir into your favorite cole slaw mix. I just used one bag of shredded cabbage and one bag of broccoli slaw, and I chopped up half a bunch of cilantro and threw it in there too. So freaking good.

I love coleslaw and found this recipe a few years ago. Can’t remember who’s it was but it lives up to it’s name.

Coleslaw “Just Like the Colonel’s”

1/3 cup splenda (or equivalent sweetener - liquid sucralose works very well and reduces the carbs)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup heavy cream
1/4 cup buttermilk (I make ‘buttermilk’ by mixing a 1/2 tsp of white vinegar into hwc and letting it sit for a few minutes)
1/4 cup mayo
1 tablespoon + 1 teaspoon + 1/2 teaspoon white vinegar
2 tablespoons + 1 teaspoon + 1/2 teaspoon lemon juice
1 - 16 ounce package Ready Pac Coleslaw Mix

Mix first 8 ingredients together until smooth to make dressing.
Add dressing to cabbage mix and refrigerate for 2 hours.
Serve.


  • is only accurate if using actual buttermilk. Nutritional Information: This makes about 7 servings of 1 cup each. Each serving has 4 grams effective carbohydrate plus 2 grams fiber, 2 grams protein, and 145 calories.
