Cauliflower Lemon Pudding

Ingredients

  1. medium size caulifloweror two small heads (~350 grams)
  2. 1 fresh lemon (for juice and zest) or 1/4 cup lemon juice
  3. sweeter (6-10 stevia drops, or other sweeters , 2Tbs of xylitol or erythritol might need to dissolve in water)

Take a head or two of cauliflower, cut off steam and break off florets.

Boil the cauliflower for awhile, 15-20+ minutes. this gets rid of the cauliflower taste.
You may need to add water if it boils off, the cauliflower should still be whole, but mushy.

save the water, but pull out the cauliflower and put into vitamix or food processor (vitamix seems to give me the pudding consistency, food processor leaves it “grainy”. You can add some cauliflower water maybe a cup, or so.

Add lemon zest from lemon and juice.

Add sweeter,

Blend it for 3 min at least, maybe longer to get it all smooth.

You can taste and add more sweeter or lemon to fit your tastes, just keep blending. it will get a little stronger taste after cooling overnight.

Put in a glass container to cool (I have to put this on a freezer block to help it cool otherwise it takes forever) Put in fridge overnight 18+ hours does the magic.

I will add it is still an aquired taste, but if your off sugar I think it is quite good.

You said boiling takes away the Cauliflower taste, i’m assuming it just goes into the water. If you didn’t want the taste could you just add a cup of water instead of the Cauliflower water? I have never made this but I love all Cauliflower recipes! Thanks!

I have not tried it with that. I will add that cauliflower is hot so vitamix can get really hot you might want to let it cool some. I did it last week while hot it wasn’t crazy but got uncomfortable.

The key is lemon and sitting/chilling overnight, something happens and it sets the taste, it is not overpowering but balanced.
