Batch cooking...ideas?

I usually enjoy cooking, but I am getting REALLY burnt out on cooking every day. Do any of you batch cook for a week at a time? If so, what do you cook? Any suggested freezer recipes? Any other advance food prep tips to make it less of a chore? We are a family of 4 so not just cooking for myself. Thanks for your advice!

My dad is batching on Sundays.

He does a ton of bacon, fat head pizza dough, Pre cooks the pizza toppings too. He does smoked brisket by pound and smoked fish that he catches ( trout,and salmon).

He is branching out more but these are his staples.

I’ve been fasting, for the last month, but I usually do batches of

Chicken thighs in bacon grease. These keep for 3-4 days. When I want one just microwave and add mayo and hot sauce. I usually do salads with Abacados, olive oil, and Bacon.

I also do tons of Cauliflower or broccoli, or brussel spouts, cut and roasted with olive oil (or coconut). I dip these in olive oil or other sauces (mayo, hot sauce, or blue cheese).

I occasionally cook up sausages or hamburgers and those keep too, not very creative but it is easy and works.

My goto dessert that travels well is Cauliflower pudding, this goes with my daughter everywhere. We must have 100 Pyrex dishes and coolers but she needs it.

Snacks are pepperoni and cheese with Guacamole (those packets are good holy Guacamole brand.)

I’ve just got a sous vide and an instant pot, I.may get a smoke gun too for smokey flavor. These arrive this week (prime day). I’m fasting till August 10th if I can make it.
