Birthday cake recipe ideas needed

Looking for a birthday cake recipe. My 5? birthday is next Friday and since going grain free 7 or 8 years ago I’ve been kind of screwed in the birthday cake department. I’d really like to find a keto cake recipe, is that too much to ask for? My traditional birthday cake was a Carvel ice cream cake that my dad would bring me from Mr. Carvel himself. My dad passed this year and I am feeling really nostalgic this holiday season so a cake I could make into an ice cream cake would be cool. However, a typical layer cake would be fine too. Beggars can’t be choosers. Preferably vanilla as my husband doesn’t like Chocolate cake but I’m flexible.

Coconut milk Keto ice cream recipe would be good too.

Difficulties: in the past I have not been able to eat egg whites (joint pain)(so a one dozen egg layer cake is probably out.)

I have an ai disorder so I avoid gums and fake sweeteners

Sweeteners: I’d just as soon use a little bit of coconut sugar than fake sweeteners as the fake sweeteners spike my bg anyway.

Am I looking for a pipe dream? Does such a recipe exist?

Here’s one I have been wanting to try. Kentucky butter cake but that might be too many eggs?

I made this for my daughter’s 13th birthday. OMG it’s good! I’ve made it three times since. In my oven I don’t cook it for as long as he says–only 30 minutes for me!

Ceithlenn that’s an interesting recipe, thank you. Thoughts on what the whey protein does in the recipe? My daughter can have butter but not whey. Wondering if there is a substitute or if I could just skip it.

Not sure about the whey. but it might give it a springier texture. The problem with leaving it out would likely be that the cake would be too moist. Protein powder absorbs a bunch of liquid. I am not sure if you replaced it with more coconut flour maybe?

Cheese cake would be awesome but my daughter and I should probably remain dairy free. I have an ai disease and dairy causes my daughter to develop sinus infections. God knows I love cheese cake.

Made a cheese cake with coconut butter. Daughter’s dairy free. It was so good!!!

All Day I Dream About Food had a link to a great chocolate cheesecake. I made it with hazelnut flour/cocoa crust.

I did, she gets super sick with dairy. Calorie warning for those who count… 4 billion, per slice😀
