Almond Flour Chocolate Chip Cookies | Chewy!

Here is my version of Chocolate Chip Cookies, I used the Keto Connect Recipe and substituted Surkin Gold Brown Sugar Alternative in place of the standard Erythritol. Enjoy!

Almond Flour Chocolate Chip Cookies | Chewy!

Servings:
Makes 16 cookies

Ingredients:
1.5 cups Almond Flour
1/2 cup Lily’s Chocolate Chips
1/2 cup butter, softened (leave on counter to soften for an hour or so.)
1 large Egg
1/2 cup Sukrin Gold (Amazon)
1 tbsp beef gelatin powder (Amazon)
1 tsp Baking powder
1 tsp Vanilla Extract

Instructions:
Preheat your oven to 350 and line two baking sheets with parchment paper.

Combine the almond flour, beef gelatin, Sukrin Gold and baking powder in a small bowl and set aside.

In a large bowl combine the softened butter, egg, and vanilla extract.

Add the dry ingredients to the wet and combine until uniform.

Fold in the chocolate chips. Using a cookie scooper, spoon or hand scoop out 16-20 cookies onto your baking sheets, depending on your cookie size preference!

Bake the cookies at 350 for 9 - 11 minutes or until golden brown on the top, or to your desired doneness. Allow cooling for at least 20 minutes prior to consuming! Enjoy

I’ve made these several times. The only problem with them is that I can’t stop eating them :joy:

Next time substitute the Surkin Gold in place of Erythritol and then see what you think.

I like them with the erythritol but use half as much as the recipe says
