Coconut cookies....soft!

Hey all,

It’s been a naughty keto weekend with a fathead pizza and some coconut cookies!

I used this recipe:https://www.allrecipes.com/recipe/268690/keto-coconut-cookies/

They taste great but they are rather spongy and not hardening it seems.

Any tips?

I would have to play around with the recipe myself some to try and figure it out, but hopefully someone will have some suggestions you might try. … My only questions is, where’s that missing cookie? :smile:

yes coconut flour would yield a more “cake’y” texture. Whixh is why its brilliant for making cakes with but not as good for cookies. If your looking for a crisper cookie…i think almond flour will be your go-to.

Most of the best ones I’ve done combine almond and coconut flour

I’m glad you enjoyed it!
Let me know if you try those others and how they turn out. I’ve had a lot of fails, so I’m pretty hesitant to try new recipes haha
