Zucchini casserole

I saw a non keto version of this a while ago and liked it so much that I made a keto version of it.

I don’t have an exact measurement for this recipe because I usually I make it as I go.

Get a bunch of not to think zucchini (get more than you think you need :slight_smile: ), cut of both ends and slice them length vise with a vegetable peeler.
I use an old Peeler an bent the blade a bit to make thicker slices.

Get some good ham, bacon or salami or whatever meat you like and put it on the slice of zucchini and roll it up. The best flavor in my opinion is a good quality dry cured ham, just need a bit in each toll as the rolls are fairly small. I used salami this time as that is what I had on hand.

This is quite time consuming.

Take some cream cheese (I used a bit less than a lb for the large casserole dish), 2-3 eggs, salt, pepper I like to put some Cayenne pepper go give a nice kick to it.
Put it in the blender or use a hand mixer and add heavy cream while blending until u get a thick batter like consistency. Poor it over the rolled up zucchini and spread it out.


I like to put some very coarse shaved Parmesan cheese on top.

Backed it for about 25-30 min @ 350F until the top is golden brown.


It goes very well with kale salad.

Notes:
The cheese sauce can be flavored according to your taste.
I sometimes I roll in every 2-3 zucchini a small piece of jalapeño pepper, good for people who like spicy.
Best part is it can be served to non keto people and they wouldn’t know they have been tricked ;).

I made a different version wit coli flower, it is good when it has to be quick.
Just tear apart a head of coli flower ( I like smaller pieces), place florets in the dish sprinkle some bacon on the coli flower cover it with the cheese sauce, bake the same way. Yum.

Looks totally yum. Am gonna try something similar tonight with left over roast chicken, bacon and vegies with the cream cheese/egg/cheese on top. Can’t wait. Winter’s just hit here in the southern hemisphere and I need the fat to keep me warm.

Interesting! I really like great idea for the the sauce you’ve created here and can see how that can be switched up to create different flavors. Had a similar dish with homemade beef sausage (sort of Italian flavored) I’ve been making but now I’m allergic to tomatoes (go figure) yet I still crave this zucchini lasagna type of dish but didn’t have a good substitute for the sauce. This will do it! I’m going to try it in my next month’s meal plan and report back how that works.

Yes! Kind of reminds me of an alfredo, but you could make it even MORE “alfredo” with Parmesan. I can think of lots of ways to work with this. :+1:

EDIT: Well, DOH! It IS Parmesan on top. I was thinking it was mozzarella. It could work with quite a variety of flavors, though.
