I’m from Wisconsin and beans are standard fare in chili up here. I’m happy to adopt the Texas way of no beans. At least we don’t put it on spaghetti like those barbarians in Cincinnati.

I’m not a “recipe guy”, but I wrote up a guide.

Pro tips:

  • Make your own spice blend: garlic, onion powder, ancho chili, cayenne chili, cumin, and salt are a good starting point.
  • Chuck roast is better than ground beef
  • Add a few umami boosters to the pot. I use fish sauce and soy sauce.
  • Experiment until you get it right
