I’m new to this whole keto diet thing. I am coming off a 5-day water fast tomorrow and plan on going keto.
I was researching suitable low carb sweeteners I could use: stevia, erythritol and xylitol being a few of them. I have been looking at the nutritional information of different brands of sweetener and have become very confused. Although these sweeteners are completely sugar-free (as expected), they still contain the normal amount of carbs. E.g: 100g of erythritol still has 100g of carbs - none of which are from sugar, but all of which are from erythritol itself. The same applies to Xylitol. This is good in the sense that they don’t spike your sugar levels, but they still have a normal amount of carbs, which completely defeats the purpose of a keto diet which requires low amounts of carbs. Yet many many people have testified to how amazing they are for the diet…
Could someone please explain this to me because I am super confused. Do the carbs in erythritol (and others) not count towards our daily carb count somehow? Or do they still need to be used in the same moderation as normal sugar?

Thet are required to list but your body doesn’t process them so they are dietary insignificant. Erythritol passes through your digestive system without being processed or absorbed by the body. At least this is my understanding. On a side note, there’s science behind the concept of the body releasing insulin when tasting something sweet. For this reason I have stopped all sweeteners as i believe they were kicking me out of ketosis. I did not conduct blood testing and everyone has different reactions to sweeteners. So, this is just my theory and I am not advising others to abstain. I will say, erythritol tastes way more like sugar than stevia for me, but im not planning to indulge in either on a routine basis. Holiday treats only most likely
