Another boring keto meal. I don’t always eat bacon, sometimes I eat pork belly.
I braised this pork belly in:
(everything guesstimated)
1/3 cup super cheap rye whiskey
1/4 cup pyure (sweetener)
3 cups of water (one added every hour)
Chicago steak seasoning
Two scoops of chocolate/cherry flavored coffee.
Coat the pork belly in Chicago steak seasoning and coffee grounds and let come up to room temperature.
Cook fat side and meat side both for two minutes on medium high heat with enough left over bacon grease to coat the bottom of the pan.
Add water, whiskey, sweetener, and heck I tossed in some hot peppers too.
Simmer for 3 hours turning every 45 minutes.
Creamed spinach:
Cook everything together in frying pan on medium heat until cream cheese is melted and moisture evaporated.
16 ounce frozen bag of spinach
1/3 stick of cream cheese
2 Tablespoons of butter
3 garlic cloves
2 Tablespoons of mayo
2 Tablespoons of heavy whipping cream
An ounce or two of aged cheddar.
I literally made this all up this morning after I couldn’t find a recipe for the ingredients I had in my hotel room.
Super cheap, makes two servings, lasts long time.
Then I decided to make up a ONE WEEK supply of desert. This dessert is quite high in carbs if you were to eat large portions of it!
I mixed up about 8-10 ounces of heavy whipping cream, 3/4 scoop of quest cookies & cream protien, sugar free vanilla pudding mix, and some 99% cocoa chocolate.
Whip with a blender until it resembles pudding and enjoy a spoon or two after dinner.
