What with liver?

#1

I have a nice piece of liver for tomorrow nights dinner and I’m not sure what to have with it. I have been making the real meal revolution liver (excellent recipe love the flavours) now need a change, any suggestions out there for a quick liver & ??. I have a sous vide, so options in that direction?

Thanks for the inspiration

I just cooked a big pack of liver yesterday. I didn’t have a recipe, but I fried it in olive oil in a cast iron pan with some bacon lardons, then once it was browned just added some crushed cloves of garlic, some heavy cream, a tin of chopped tomatoes, and a dash of marjoram, salt, black pepper and chili pepper flakes. Then simmered everything for about 15 minutes on low heat.

It was fantastic, I have it in the fridge now for my next two evening meals.

Have you ever squeezed fresh lemon juice on a piece of pan-fried liver? It’s incredibly delicious. A very quick thing to do is pan-fry the liver, before serving, cut lemon in half, and squeeze its juice all over the liver pieces. Serve with a lemony hollandaise sauce.

I like frying it in bacon grease and throwing in some onion slices when it’s near done.

The real meal revolution recipe has 1 cup of tomato puree which has LOADS of sugar so made by own sauce which was surprisingly good;

tin of tomatoes heated in a sauce pan add garlic (I used 3 cloves), add several squirts of tomato puree and sun dried tomato puree, salt pepper and finally some double cream. cooked for circa 10 mins to reduce, serve.
