What to do with pork fat from shoulder

I just got back from a trip to NC - on my way back I bought a smoked pork shoulder from a restaurant to cut up and share with friends. Once chilled there was a fair amount of solid fat and truthfully it was kind of gross to feel as I was cutting it up.

I got 4 big bags of shredded/chopped pork - but also a massive bag that has all the fat and bark from the shoulder.

What should I do with it??? I hate to throw it out but I am kind of sick of pork right now!

Maybe you can turn it into rendered pork fat to use when cooking??

I always say… 1 ham + 2 people = Eternity!
Freeze it and use it when you cook your veggies for seasoning. Yummm!

Render the bacon fat in the oven in a dutch oven or pan.

Use bacon grease to make:

Artisanal Smoked Farm to Table Mayonnaise :smile:

It goes great for the mayo in a BLT salad (substitute vegs or quantities as you wish for your keto macros):

Thanks everyone! My friend came over yesterday to get some of the pulled pork - she offered to try making crackling with it.

One of the things I love about a pork picnic is the amount of fat on it. Makes the joint self-basting and tastes delicious!

I just did one of these in the pressure cooker a/k/a instant pot. OMG it’s heaven.
