Once every couple of weeks I crave a soda and buy a single Zevia (stevia soda) and I am not able to finish it all.

Everyone’s different and some people are more sensitive to good no/low carb sweeteners than others, but I’ve seen no adverse effect at all. I’ve lost almost 50 pounds in the last 5 months and haven’t had trouble getting into/staying in ketosis. YMMV, of course, so you can certainly experiment with periods of no sweeteners to see if it makes a difference for you.

That said, the type of sweetener really does make a difference. I stick to stevia like 90% of the time, supplement with erythritol and monk fruit occasionally, and consume sucralose even more occasionally. I don’t touch malitol, dextrose, maltodextrin or fiber syrup. I also generally avoid aspartame, but will have a diet soda that uses it on very, very rare occasions.
