No. I marinated it in ACV with a teaspoon of soy sauce, and some seasme seed oil. Just enough of each for flavor. Poured boiling water in the marinade, and let it sit for about 30 minutes. Pushed about two or three teaspoons of Kosher coarse salt down into the skin slices.

Then I just fried it in the mornings left over bacon drippings.

Add a side of sour cream.

Just very simple. Just very delicious.

Have just 23 more of those in my freezer :wink:

We had chicken thighs with Thai basil & mushroom gravy with a side of broccoli with bacon and habanero cheddar. Yummy cheesecake for dessert. My son melted some 98% dark chocolate over his.

Well, tonight was ‘Scrap Night’ 
 The wife’s shoulder was still hurting so I just searched for left-overs. Ended up cutting up steak strips, adding some Rao’s Sauce and some cheeses and baked in the oven. (Like a steak-pizza without crust) 
 I also used the bowl of picked chicken meat we hadn’t used yet. Added some eggs, mozzarella cheese and made some large Chicken Fritters. (Added some olives, but ran out of small pickles)

Chicken tenders. Breading is almond flour and shredded coconut with salt and pepper. Egg wash is egg and a tablespoon of heavy cream. Kind of followed this(cook time was spot on): https://www.ketoconnect.net/keto-chicken-tenders/

I double dipped them though for more “breading”. Egg wash, then flour mixture, then more egg and more flour. I think the rack thingy I cooked them on made a big difference. So that air could get underneath and cook them. Next time I might find a way to flip them. The bottom breading wasn’t as good.

Also, my friend gave me a bag of trader Joe’s cauliflower mash. A little too many carbs to have regularly but a nice treat. I added garlic powder, parsley, and oragano. And of course butter
