I will try making these with mild green chiles - Hatch, Anaheim, or Poblano - as I don’t tolerate jalapeños well.

I’ve made these a few times and they are indeed quite good! But actually, I accidentally left out the cheddar cheese the first time I made them, not thinking. Still wasn’t bad though.
BUT… The one that I really want to make now is this bad boy!
I portioned mine into half lb packages before tossing in the freezer. Grabbed one and started walking away before coming back for the second one.
My mom used to buy ground beef in large amounts; she used to have her butcher grind up London broil steaks! She would then have them split it up into 1# and 3# packages and put them in the freezer. I don’t know what I would do w/ 10# of ground beef! No room in my freezer for storage!

The Jalapenos mellow out significantly after being baked. Even my younger kids who might otherwise be sensitive eat them up with no problem. Just FYI.
It’s the only thing in my freezer. 18 bags split into 1/2 lbs each. Bags 19 and 20 were for dinner today and tomorrow.
@gundy, maybe so but the heartburn I get from jalapeños, cooked or raw, is not worth it.

I usually fast 18-ish hours a day, but when I decide to fuel up in the morning, this is a favorite. Two scoops protein, 1 scoop coconut powder, mixed with fresh brewed hot black coffee.
I cut MCT oil for a little bit but noticed I haven’t had the same energy so I’ve reintroduced to help up fat and hopefully add energy. Picked up some chocolate MCT powder that’s really good in my morning cold brew.
Interesting! When I started keto 8 weeks ago, I was using a Tbsp of MCT oil 1x/day, but then stopped, as I disliked the taste of it. I bought a different brand but haven’t been using it. Will start adding it to my coffee in the morning and see how that works out.
MCT oil shouldn’t have a taste. But I guess just like coriander tastes like soap to some, it’s possible the same is true for MCT oil?
