Sous Vide corn beef for about 52 hours then smoked at 225 till it got giggly. It transformed into luscious Pastrami.


Made a ton of brats and sausages because, well I just really wanted that today.

Mexican restaurant. Steak fajitas. I ate the pico de gallo salad and about half the skillet of meat and peppers. My son ate my beans and rice. Brought the rest home.

Breakfast - bullet proof cocoa (no sweetener)

Lunch - home-made mayonnaise, Parma ham, lettuce, cucumber and a tomato

Dinner - 1 keto bread roll (Diet Doctor recipe - first baking with ‘keto’ ingredients, please wish me luck), home-made rillettes, butter, creme fraise and raspberries.

That’s: carbs 18g, protein 65g, fat 160g

Todays. Dinner, thick cut spare ribs, marinated in chilies and spices for 24 hours, slow cooked in the oven all day then finished on the bbq. Served with bacon grease and smoked bacon fried rainbow chard and coleslaw.
Then ate outside because it was so nice out. So extra vit. D :sunny: :smile:

Today I made my Grandma’s Pickles. They are naturally keto of course. I hadn’t planned to make pickles but my farmer friend cucumber-bombed me! At least she was sweet enough to bring along a bouquet of dill heads! :smile: I did them in the Sous Vide 140/3. I hope they turn out with a nice, crisp crunch. My Grandma would have loved the SV.

Fat bombs three ways. I’m not positive if these are technically fat bombs or just Keto desserts, but they are delicious! The top one is Chocolate Chip. The lower left is Almond Joy and the lower right is Peanut Butter.

I will probably tweak the recipes, but for a first try, I kind of impressed myself, IMHO.:yum:
