These were fun. I was inspired by this recipe (http://amp.tastemade.com/videos/crepe-rolls.html) but I used the cream cheese and egg crepe recipe. They crumbled a little when I was shaping them but it was still good. I filled it with mushrooms, summer squash, shallots, pine nuts, garlic, butter, Rosemary, and thyme. I put parm and egg on the top like the recipe says.

I’m still searching, apparently in vain, for good sausage that isn’t adulterated with sugar and corn syrup.
Guess I need to move to the woods and raise my own hogs but it’s a ways to go before I can retire… dangit.
Hey, US Wellness Meats sells pork belly, you can just order it from them if you can’t find it.
I haven’t ordered from them yet but seriously considering as it seems one of the few good ways to get pork that isn’t adulterated with sugar and garbage.

Took an idea from one of @Ernest post…then twisted it a bit.
McDonalds sausage patties, Canadian bacon, eggs and of course, fresh jalapeños. Also added some Valentina’s.
Sorry, this does not make a pretty picture… I was having a problem with what to eat when I’m at my boyfriend’s, but now I finally have a default solution - he buys me eggs, mozzarella and grated cheese, and I just stick ‘em on a frying pan.
And add wine on a good day. Or on a bad day.
Other than a few coffee beans (tasting a new variety) I haven’t yet. I plan to eat after I run in a few minutes… But here’s a snap of my fridge drawer.
