Beautiful day…perfect for… BBQ!
Brisket, point section. I don’t mess with the flat section of the brisket. I don’t care how one is great at BBQ, the flat section will almost certainly be dry when done.

AND! Slurring BBQ sauce on oven cooked meat is not BBQ.
SORRY! LOL!!

Cooked for the week and sampled all. Made over the top chili no beans, limit portion size and it fits in my plan. Next was wings and finally some thighs, a few wrapped in jowl bacon.

Green Chile and Chicken Soup
1 teaspoon bacon grease (can use oil or butter)
1/4 cup onions, chopped
1/2 cup cremini mushrooms, sliced
1 clove garlic, minced

3 Cups Chicken Broth
3 Tablespoons, Hatch hot chopped chiles
1 1/2 Cups Rotisserie Chicken, chopped
1 Cup Spinach, chopped
3/4-1 teaspoon smoked paprika
Salt and Pepper to taste
1/4 Cup Heavy Whipping Cream

Garnish(optional)
Sour Cream
Monterey Jack/ Cheddar Cheese
Cilantro
Pork rinds
Makes 3 Large bowls or 4 smaller bowls

Sauté onions, mushrooms and garlic in bacon grease on low/medium heat until onions are opaque.
Pour in everything else except heavy whipping cream. Turn heat up to Medium cook for 10 minutes. Turn down heat to low add heavy whipping cream. Cook for another 5 minutes. Garnish if desired. 4 carbs without garnish

The brisket was smoked yesterday, portioned and vacuum sealed. Reheat sous vide at 131 degrees.
Tastes fresh off the smoker.

I ate it too fast to take pictures of it, but pork steaks cooked “Shake and Bake” style, covered with ground pork rinds, asiago, and Shitake mushroom powder, along with sautéed mushrooms and green peppers, and some creamed spinach. Yummmo! :drooling_face:
