Vacation is over and now I have two weeks to pack up the apartment all while working extra shifts at work along with a surprise visit from my mom all week. Needless to say, stress is here. I’m trying to do my best and after a day of hamburger patties and bacon yesterday I made some herb and butter pork chops and flax muffins today. Had a lunch of sliced turkey, cheese, and mayo. The flax muffins are great. They are mostly egg, butter, cinnamon, and flax. They don’t have any other “flours”. Each one has a good 15 grams of fat before the butter on top :heart_eyes:

Went a bit off track on vacation (some melon, bbq sauce, beans and one small piece of birthday cake) but I avoided the chips, donuts, ice cream and popsicles that were a frequent thing at the beach. Tried to offset it by going on super long after dinner walks.

Avacado, artichoke, mint leaves, a little salt, a little stevia and some coconut oil to thin it out. Stick blender pureed - not too sure what to call it but it was delicious. A little sweet, a little earthy, just enough of a salt flavour and really creamy!

No pics but chicken satay & chicken rendang, went up for 2nds & 3rds, probably some some carbs but all made with skin on chicken thighs, nom nom.

Mum and I found a new pub! They didn’t even raise an eyebrow when I asked for the ploughman’s lunch without the bread!
It was delicious, brie, home cooked ham and salt beef!

Artichoke & Gruyere Cheese Frittata

I turned 60 today, this is my birthday “cake”! I have been missing this because I couldn’t find frozen artichoke hearts. Thanks @DiMo for clueing me in on Trader Joe’s, :slightly_smiling_face:. I thought of you @BeStill when I was making this, wishing I could share a piece of this heaven with you. :wink: I was told 15 years ago that I probably wouldn’t live this long by my doctor because of my atherosclerosis severity. I showed him, I dropped that Lipitor like a hot cauliflower! Here I am stronger than I was then. Take things into your own hands is the moral of that story.

I am really savoring this cake. :yum: :cowboy_hat_face:

A hodge podge lunch of cheddar jalapeño sausages, a spicy chicken patty, creamed cabbage with nutmeg, a blueberry cheesecake scone (a la Carrie Brown) and a little bit of apple with lots of sharp cheddar.
