Oh how I miss those days!
We had a wonderful trip away thank you, typical British weather meant that we packed shorts and bought buckets and spades for the beach, but wore mostly wellies and rain Macs!
Didn’t stop us though!
I got sick starting Friday night, so there are some hole in the pics … not because I didn’t eat, but I wasn’t feeling well (fever and all) so I forgot a couple of pics.

2 1/2 burger patties from BurgerSmith

Just made some chocolate orange cheesecake mousse - it’s now in the fridge chilling.
Net carbs in total mix is 23.5g. I split this into four portions (6g) although it would serve six (4g) easily.
Can’t wait to get stuck in!
I had no idea she left a soup recipe for us!
Now I’ve got to look that up, is it a meaty variation on a Bloody Mary, hold the vodka by chance?
Aha, similar to Gazpacho. I’ll be making some of that when my tomatoes, cucumbers and peppers are in full swing.
Haha! It is indeed a take on bloody Mary soup, celery, tomatoes, celery salt, chilli and worcestershire sauce! Laced with vodka to wow your dinner party guests, or not, to take to work (mores the pity)!
I serve it hot, but I’m guessing it might be good cold, like a gazpachio.
The recipes that I found were cold, it would be great with some , I’ve heard of that in some Bloody Mary concoctions. I mean is there anything tastier in the world than bacon and tomatoes combined?
I’m sure it would work with bacon! What wouldn’t. In fact I have served it with a drizzle of basil oil and some crumbled pancetta.
This is a recipe from Delia Smith, a great British institution, she taught me to cook in my younger days! She was ahead of her time but got taken over by a multitude of modern chefs!
I do the same type of omelet but dip it in marinara sauce! It’s like pizza but really low carb yum!

Buffalo Chicken Omelette
Leftover Rotisserie Chicken sautéed in Butter with some dry Garlic granules, Frank’s Wing Sauce and cubed Bacon, with Gorgonzola Cheese, and Sour Cream.
Cut open to expose the meaty cheesy interior for your photographic enjoyment!

We have this every time we want a treat - the starting point was this recipe http://www.diabeticgoodbaking.com/2015/01/chocolate-mousse.html but it’s developed (because, well, cream cheese) to:
Melt 100g 90% cocoa solids chocolate with a little sweetener (I use 4 dsp Splenda) with 1 dsp orange extract and 250ml double cream. While still hot, whisk in a whole egg (electric whisk, or you’ll be hours). Add 250g cream cheese and whisk for 5 mins. Add another 250g cream cheese and whisk until very thick. Divide into ramekins and chill.
Four portions is RIDICULOUS - try six or eight.
I have no excuses. My bad.
I’ve been waiting for everyone to leave/go to bed so I can sit in the garden with one last vodka soda and a cheeky smoke.
Back to the grind tomorrow peeps. I’ve not tracked a single morsel of food for days, feeling a little chubby. In a weird way I kinda like the extra swagger. Starting to wonder if I lost a bit too much weight recently

@ClareBear Are you in maintenance? Because if you aren’t wanting to loose more weight just start eating a bit more fat so you don’t burn what you have now.
I’m not sure what I want to be honest @David_Stilley…weight loss has been a funny old thing for me. I’ve lost a s*it load of weight and still didn’t feel happy. I’ve seen a few photos of myself recently and was a bit alarmed at how slim i looked. I’ve lost all the parts of me that I loved the most. I think it’s time to accept that I am what I am, get my head into maintenance mode and indulge in a bit of ‘self love’.
