Made a mid-day meal… Sausage, Cheese and Pepperoni Omelette
EDIT: Shortly after finishing up the above meal, Wife came back from delivering some Cheese Cakes, Cranberry Walnut Bundt’s and Bread Pudding to some of the neighbors. Of course they returned the favor sending some stuff back as well. Had a small piece of German Chocolate Cake and some Bread Pudding my Wife had made earlier in the day
I can’t believe i didn’t write it down. There was a recipe on a thread for mayonnaise that could also be used for Hollandaise sauce. I had plans for Eggs Bennedict today but looks like it won’t be happening.
My contributions to the feast at my Godchildren’s parents home - accompaniments for a huge 7-rib smoked prime rib roast. Bacon Brussels gratin, “fathead” garlic rolls (tree - picture was pre-garlic butter), and keto rolls from Emmerich/Diet Doctor. Also made some chewy keto chocolate chip cookies. I still lose control with sweets, so most of the remainder are going deep into the freezer.
I have one it’s very easy if you have a stick blender. (immersion blender)
melt one stick of butter and let cool (but still be liquid)
in a cup/vessel suited to your stick blender put in one egg (or 2 yolks) jigger of lemon juice, salt & pepper (I use red pepper) and dollop of mustard. whir with blender.
Then drizzle in the melted butter while blending. in 30 seconds or less --> smooth and yummy hollandaise. I make it frequently and eat it lots!
add herbs if desired, I sometimes add dill or basil or tarragon…

also that goose today was incredible and I am stuffed. So stuffed. so much goose and duck, with a tiny bit of braised cabbage on the side.

Here is my Christmas dinner. I almost forgot a pic. I am alone and working this year, the family is far away. The most tender ribeye ever. Cooked rare.
Christmas OMAD:
HAM and Corned Beef. Though I skipped over ALL sides, breads and deserts … I will see the scale go up tomorrow because I CAN NOT get enough to drink after all the ham. lol At least water weight won’t last too long.
Wife asked if we could just go traditional this Christmas, so I said sure, no problems here. So yes, this is not Keto-Friendly as usual… Started with an appetizer of Turkey Liver & Gizzards, 3 dinner rolls, then some Turkey, Stuffing, Mashed Potatoes & Gravy and a Baked Sweet Potato. … Then had a slice of Cherry Cheese Cake & then a slice of Pumpkin Pie. - So yep, Carbed up a little tonight but all’s good.
Told the Wife I will just Fast till February. Kidding, of course…

Roast pork today. Similar accompaniments to yesterday. OMG you would think I had learnt my lesson. But I truly believe that if I only had one tooth left in my head, I would still go for some pork crackling

Well that’s 2 small roast potatoes and 2 small roast parsnips over the 2 days! Roll on next year

I have a very simple recipe for Hollandaise, made over a bain-marie (or in a bowl over a pot of boiling water;)). This recipe is for two eggs benedict.
Melt 30g of butter in a bowl and set aside, place another bowl and whisk 1 egg yolk, 20g water, 1 tsp of lemon juice and a bit of mustard. Slowly drizzle butter into the yolk mixture while whisking and continue whisking until it thickens.
Grabbed a bite for lunch at Giant while out… Some Garlic Turkey Breast slices, Pepperoni, Rotisserie Chicken Leg/Quarter, a piece of Whiting and a piece of Catfish and two Chicken Chunks (nuggets?)
Made a large pot of turkey and Andouille sausage gumbo out of turkey leftovers. I have a feeling we will be freezing a lot of this.
I made my own roux and it has 1/4 cup of flour for the entire pot, so 24 carbs for at least 8 servings so ~ 3 per bowl for the flour. A bit more when you count the onions.
