Aww I wish I had remembered my photos today. Went out for lunch with some of my old work colleagues to my new favourite restaurant. Pitch in Worthing.
Started with mussels and bacon in creamy wine sauce. I requested no bread but leave the butter! It made the best sauce with the mussels.
Then I had minute steak with salad and chimichurri sauce, a lovely cheese plate and coffee and cream to finish!
I was presented with some very generous gifts and best of all cards signed by so many people, it made me cry😢
Seriously, that’s all they smelled of!
Now I’m the most unsqueamish person I know, having grown up rearing our own animals for meat (including homemade sausages), milk and eggs, but these French numbers were rank…
It was really lovely. I have worked at this hospital, with a couple of short breaks, for 43 years!

But that’s the “snap” that makes a good Sausage and the difference from some manufactured fake casings that are often tough instead.
With just about the last of my tomatoes, these little ones were green and hard when they were harvested. A light sprinkling of Cotija Cheese and Sour Cream.

Yeah I do love sausages, I’ve just never had much luck with the casings!
I’ve never found it raw. Would love to though. Last night I found this brand, which I’m excited to try tonight as an ingredient in Southern style smothered pork chops. Meat topped with other meat is my jam.

@Wahinewanders I’ve had their ham before. Usually andouille is pretty brownish red from paprika, I await your verdict on it. Meat on meat is the best!
