I made this open chicken, lettuce and mayo chaffle sandwich today and my gosh it was GOOD.
Chaffle method (makes two large chaffles):
Preheat waffle maker
Beat one large egg with 1 tbsp heavy cream, season with salt and pepper
Finely slice two spring onions/scallions
Scatter two waffle hollows with enough grated cheese to lightly cover the base. Pour half the egg mixture over each, scatter half the onions evenly over each, top again with grated cheese.
I cooked these in my breville on the classic setting, set to medium light, for 4 mins.
Top with avocado, lettuce, mayo, chicken, salt and pepper. Phenomenal!
Bit of a cheat, really! Equal quantities of supermarket coleslaw and homemade sauerkraut, plus a load of grated cheese and black pepper.

2nd attempt at low and slow oven technique for strip loin. This time I used a small strip loin roast instead of two steaks. This time I cooked it at 150 F for 4 hours instead of 175 F for 2.5 hrs. At the end I seared the roast for 30 seconds on each side in a VERY hot pan.
The results were perfection to my tastes.
As you can see the results are exactly like sous viding. The rareness of the meat goes all the way to the edges and the meat is much more tender than a faster, higher temperature cook would render it. But, the taste in better than from the sous vide. The juices stay in the meat with this method and the final result is juicier. Also, sous viding slightly alters the taste of the meats since the meat is soaking in its juices for hours. I prefer the oven cooked taste profile.
That is a thing of beauty!!! Still waiting for my waffle iron to be delivered!!!
Thanks! Well then, mine will probably be a mix of homemade coleslaw with store bought sauerkraut and added shredded cheddar and lots of fresh cracked pepper. Looks really yummy and a bit of a change!
Eggs Benedict with chaffles. This is hubby’s plate. Mine is one egg and a smaller chaffle as I just can’t eat much in the mornings anymore.
I weighed the egg and proportioned the cheese at 80%. Mine came out about right - hubby’s was too thick but he enjoyed it anyway. These were good!
Wife and Son went out shopping and sat down for a bite last night while out. So I skipped dinner… Had a nice mid-day meal today though… Eggs, Bacon, Sausage links and a piece of Angus Steak.

Bacon, scrambled eggs, 90 sec alone keto bread + low sugar HP sauce, was super full after but the ‘bread’ was a real treat

Makes me think of the years I wasted looking for a quick fix, fast weight loss, only to hate it and fail, doing more damage than good. I look forward to my first Ketoversary and am going to put it on my calendar so I remember to mark the milestone like you!
