Almost forgot to post tonight’s meal… Appetizer plate of Smoked Sausage, Pepperoni, Cheddar and Muenster Cheese and a piece of Salmon. Then a Pork Chop with Almond Flour Crust.

Unfortunately, can’t avail ourselves of the cooling system. I’ve heard of people putting little bags through the inspection door (a tiny door in the back), but most trailers don’t have them any more. And no, not full to the brim, because they have to have the cold air circulating on all sides of the food (there are channels in the floor), plus many commodities would make us weigh too much if the entire box was full.

It’s an egg windfall! A bonanza! This dozen will be done pickling in about seven days. I still have almost four dozen fresh eggs to deal with. Maybe tomorrow I’ll make a turmeric batch or something. Those would make some bad ass deviled eggs I bet!

Ooooh I love a pickled egg - I always used to ask for one when my dad went to the chippy for our weekly fish and chips!

I occasionally pop a couple of hard boiled eggs into whatever I’m fermenting, after it’s been going for a while (sauerkraut, cucumbers or my kimchi-ish) and after a couple of days they’re incredible! Haven’t done that for some time though - so you’ve inspired me to boil a couple of eggs this evening to bung into my kraut jar!

Changing my eating a little**. I have been getting into a habit of eating twice a day and a specific amount … Regardless of “hunger” signals. So, I will be eating ONLY when HUNGRY and eating till full (not even weighing it out). SO …

Tuesday’s dinner: Ground beef (new 70/30 ground chuck blend so no butter or cheese needed) and 2 chaffles w/ butter. I did NOT eat all the meat … Maybe 1/3.

** I haven’t gained weight or anything … Stalled at the most.

Try buying some Bok Choy and cooking it by boiling it in salted water, draining it and then frying it in olive oil (thanks to @David_Stilley for the recipe) and it is delicious and a very low carb vegetable. I did that last night for supper, (I added some celery and cauliflower too) and then ate that with 1 cup roast beef that I cooked for Monday night’s dinner (I tossed in the meat that was already cooked at the end just to heat it up) and it was a delicious meal!

My first attempt at egg drop soup, which for some reason I’ve never had. It’s delicious. I’m feeling kind of yucky today and it’s settling my stomach nicely.

Lunch at my desk: baby pickles with tuna salad (made with mayo, sliced grape tomatoes, pickles, kalamata olives, diced sharp cheddar, Dijon mustard, lemon zest, a bit of lemon juice, salt, fresh ground black pepper and some Everything but the Bagel Seasoning).

Went to a Syrian restaurant. Here is a lamb kebab and salad on saffron rice. I’ll be eating the meat and salad, but the rice is so pretty I kept it in the picture

Still feeling a little hungry so I grabbed a piece of chicken breast, with barbecue sauce on it. I rinsed off the barbecue sauce, and it still has a nice smokiness to it
