OMG !!! I freaking nailed it ! This was “the best” meat of any kind, which I have ever prepared in my 55 years !

Tri Tip Roast, Souse Vide’d @138 deg F, for 16 hrs.

I marinaded it in Soy sauce for 8hrs first, then drained off all of the excess. Seasonings included zero salt, as the Soy sauce was salty enough. Only used a generous amount of garlic powder and black pepper.

Seared with my heavy duty torch from Harbor Freight… Oh, after a coating of mayonnaise, to boost the maillard reaction (browning)

Flavor. 10 out of 10

Tenderness. 10 out of 10 (ok, maybe a 9.8 out of 10… As if it were any more tender, it would have been mushy. 12-14 hours might have been ever so slightly better… By being every so slightly tougher)

Juiciness 10 out of 10. Honestly, it was so juicy, it made it hard to pick up any of the additional juice that I had saved !

Long story short, I was trying to put it away after my second good sized serving, and had to eat another half serving… Then ziplock it and get it in the fridge before I ate any more !

Just unbelievable good !

THIS will be what I cook and serve the next time we have company. Plus I can get a big, fat one to serve 4 or 5 people, for like $15 :slight_smile:

Tuesday dinner:

1 lb ground beef w/ cream cheese and I used Pork skins as a transport medium :wink:

I pressure cooked some ribs for 20 minutes, released the steam and tossed with my Greek rub.
Fry them till crispy and dip in lemon butter. I also had fried pumpkin and green stuff.
The ribs were fall off the bone easy.

My dinner for the past 3 nights and again tonight. Chili cheese dogs in a bowl with cheddar, red onion, sour cream and a bunch of cilantro. Buttered keto bun on the side.

Hey Frank, yep. I dunno about a quarter cup on each side… Then just used the back side of a spoon to kind of spread it around.
So not only does it seem to brown better, but it doesn’t allow the surface to dry out.
I will definitely keep doing the mayo coating on all of my beef Sous Vide’s.

I think I made too much but on the plate for lunch is leftover pesto butter salmon, a soft boiled egg, and two cheeseburgers with guacamole.

I buy the Great Value bag of it weekly at Walmart (usually 2-3 bags) and there are 6-7 salmon steaks per bag. I make one bag at a time, and I have 2, hubby has 2 and if the girls don’t eat up the other 2 or 3 I have them for lunch the next day.

Tonight I had, crispy skinned seabass fillets, with a lemon and parsley butter, sprinkled with toasted almonds. Served with roasted tomatoes, asparagus and crispy kale!
It was all delicious :yum:

I buy the Great Value Walmart brand. The better stuff probably tastes better. I try to do a good balance with shopping for economical reasons is all. We still have our 18 year old, and 21 year old daughters at home, and our 3 year old grand daughter and hubby and me. I am the only one of us doing Keto, so I still have to buy all their food, and as much as possible I try to make my Keto work in coordination for the meals I am preparing for them. I feed my hubby the same meals I am eating at times for supper (or his have added carbs such as potatoes).
