Some Cauliflower and Broccoli in a creamy Cheese Sauce, two Burgers, one with thick Colby, the other with Mozzarella, topped with Sour Cream and Scallions. Some Turkey Salad, Mushrooms, Pickles, Olives and some Bacon. Also had an Almond Milk, some Pecans and Lindt’s Dark Chocolate.

We made it back home in one piece :slight_smile: we bought some mortadella, burrata, parmesan, etc for a couch-style Italian feast…we decided to take a little break from Italy and make ourselves some of our favorites…one look at the stove and we decided we’re too lazy, so we ordered a little Balkan feast :slight_smile: Italia domani, mangiare, si… :slight_smile:

Sausage and Eggs

I woke up last night about 1am with a serious salt crunch, had to get up and down some pink rocks to get calmed muscles and go back to sleep a couple hours later. Extra salt this morning too.

I feel ya…
Last night around 11pm I noticed i was having spasms in my belly and my face went flushed and red and i was seeing “beautiful stars” and my pulse was going wonky and my calves were tightening up…

1 cup of chicken tea with extra half-salt and i was back in bed feeling grand! Amazing how it can just hit randomly

I decided I’m going to try to eat all my meals within 5 hours on Saturdays and Sundays. I had a good breakfast of scrambled egg and sausage on a cheese “taco” shell and a couple cups of coffee. For my lunch/supper I made salmon and roasted asparagus. (The salmon in the photo is for today and leftovers tomorrow. I didn’t eat all of that. Though I did think about it.) I finished with a glass of iced coffee, while sitting on the back porch in 99-degree heat.

Thank you! I love the flake of the fish but the crunch of the herb crust and the skin makes it even better. For some strange reason I somehow feel like I’m eating more when I’m crunching on something!

Sure!

I make a dry rub and coat the whole filet. I wrap it tightly in plastic wrap, into the fridge overnight. I preheat the oven to 400 degrees. Then I heat olive oil in a pan over medium high heat and sear the salmon fillets on all sides for about 4 minutes per side. Then I finish them in the oven for 3-4 minutes if needed. (My filets were nice and thick so they needed it.)

Dry rub ingredients:

  • 1 teaspoon basil leaves
  • 1 teaspoon garlic powder
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon oregano
  • 1/2 teaspoon parsley
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt (I use sea salt)
