Keto lasagne!

Layered homemade ragu with blanched white cabbage leaves and sliced mozzarella (which in combination seemed to give that soft chewiness of pasta lasagne sheets) and faux bechemel made of blended cauliflower and some yeast flakes for savouriness. Loads of cheese in this mutha.

Mr S has no clue what the pasta substitute was - which is fine, because he loved it!

I had some ragu left in the fridge, and a white cabbage (I am crazy about brassicas!).

I blanched about half a dozen, or maybe 8, cabbage leaves and cut them into manageable pieces.

Started with a layer of ragu, then a one-leaf-deep layer of cabbage, then half a ball of mozzarella, sliced, then a layer of white sauce made from about 350g frozen cauliflower, microwaved until soft then whizzed (undrained so it was sloppy) with spoonful of nutritional yeast flakes, salt, pepper and a handful of grated cheese. I used half the white sauce for this first set of layers.

Then another round of layering (ragu, cabbage, the other half of the mozzarella, the other half of the white sauce), finishing with a load of grated cheese.

Moderate oven (160 degrees C) for 40 mins, then I raised the temp to 210 degrees C to brown the cheese and dry it off a bit!

I use the cauliflower white sauce for everything - shepherd’s pie, fish pie, lasagne, cauliflower cheese - it’s so versatile! If I drain it before I whizz it, and add TONNES of cheese, it makes excellent mash for with sausages or stew.

I don’t see them in gas stations much, I found these at dollar general, but they sell bai at Walmart and places like that! I drink them if I feel I’m having a sweet tooth and it hits the spot!

Leftover Meatzza

I was going to eat this avocado at breakfast but even though it was totally black, getting soft and the skin starting to sink in from losing water it was hard around the seed. In the past I would have pitched it but sautéing makes them edible and delicious, I learned that here after throwing countless avocados into the garbage. :cowboy_hat_face:

I’ve baked avocados that wouldn’t ripen in the past and found that to make them edible, if not really good. I wonder if deep frying them would also work?
