My husband and I are going through a little “shit hitting the fan” phase (we are ok, but our car broke down, my dad had another stroke, so he’s back in the hospital, et.) so we decided that we will have a little dessert at a coffee place in the town where my dad’s hospital is. He’s in a home about 60km from us, this town is about 100km away. This coffee place makes lchf desserts, so we attacked cakes and ice cream - i’m always a little disappointed by lchf cakes, they don’t have that much flavor, but the ice cream was deeeellliiicooouuus!!! Stuffing my feelings with erythritol, but oh well, desperate times call for desperate measures :wink:

I am so sorry about your dad having another stroke =(, I hope that he will be okay. The car breaking down, when you are already stressed out and upset is just an added aggravation you certainly didn’t need right now =(.

That is really cool that they make LCHF deserts, I have never known any restaurants to do that, that is awesome. It was nice that you could have some treats! Take care, best wishes for your dad.

@Momof5 and @KetoSnaps thank you for your wishes. He has Korsakoff syndrome, he had a stroke about 6 years ago during the second abstinence crisis, so his left side was weaker. He was a big foodie and he loved to eat, so my husband and I would always bring him something sweet during our visits, a few minutes of pleasure before he forgets. :wink: Now it seems that he has problems with the swallowing, so I hope that improves a little. At least, with his dementia, he doesn’t really know what is going on, it is harder on us. We are comforted by the idea that it can always be much much worse and that we will get through this soon. :slight_smile:

We have a few bakeries that offer lchf desserts, the one in Ljubljana closed, so we are in those towns, we decided to try them out. :slight_smile:

My mom is 91 and has alzheimers, so I can relate to that part. It is not easy seeing your parents like that =(.

Yes, and my dad died when he was 72, so she keeps saying she wants to die and join him, etc. so it is hard. I am happy for you that you had a nice treat out with your hubby in the midst of all this stress at the moment though =).

My dad will be 66 in October, he’s been in the home for 6 years now. Unfortunately, he was an alcoholic and he deteriorated with a year…I’m his guardian, he took care of me and now I get to take care of him :slight_smile: My dads dementia is funny: he sees a tree that reminds him of New York (he was a pilot) and he thinks he’s in New York, so I’m “lucky” in the sense that he makes up his own reality and it is a happy one :slight_smile: These conditions are hard on us, I’m sure you go through the rollercoaster of being ok and then you feel like you had the wind knocked right out you.

I live in a retirement community where breakfast and one other meal are provided each day. On the first Sunday of the month, we have a brunch, and today’s brunch included the regular cast of characters:

  • Bacon
  • Sausage
  • Bratwurst
  • Fried veggies and onions
  • Shrimp
  • Lox with cream cheese, diced onions, and capers
  • Sliced filet of beef

I bought a 6 pack of it at Costco (down the aisle that sells canned salmon, tuna, etc) and it was about $14.00 for 6 large cans, and I used one.

The Kirkland name brand I get (Costo’s store brand) and there is no sugar, or oil, etc and very Keto friendly =).

Thanks, Susan! We have Costco here (UK) but no stores anywhere near me - assuming their product range is similar - but I’ve watched the recipe video and I reckon I could come up with a chicken ‘meatzza’ using chicken thighs or legs, cooked and chopped in the food processor. I’m hoping anything like that should be bindable with Parmesan and an egg!

I’ll give it a try next time I’m cooking chicken - I’ll report back!
