Bacon wrapped scotch eggs.
They look like they’ve turned out OK, guess I’ll find out tomorrow when I try one.
I have never liked traditional scotch eggs so we shall see… they’re bigger than I expected they would be, but my girls do lay massive eggs…

Chicken thighs and pak choi fried in butter. May have burned the butter a bit but oh well! I was actually full after three thighs tonight. I’m gonna consider that a miracle!
Mid-day meal… Bacon, Eggs, and Spam with Cheese. Bacon got a little dark, since the stoves giving the Wife fits presently. It’s been acting up, but not sure why? It’s not even that old? … Also had some Salted Peanuts while waiting and a glass of Almond Milk.
Lunch, rats, I forgot to take a picture so I took a Screenshot of the recipe. Mine looked exactly like this, except are used green onions instead of shallot on the salad. I ate very little of the salad because it had peaches in it which are quite sweet.
I also served mine with sugar snap peas, and kidney bean lemon mash. I also did not eat the mash. The dressing on the salad was salt pepper lime and honey, but I used Stevia
Left-over brisket, ribs, & chicken with low-carb BBQ sauce, Cole slaw, faux-tato salad. I’m testing side dish recipes for a big party next weekend.
