We used skinless thighs, but I put in with skin as it was easier and close enough.

Just put the ingredients (mixed into the cream cheese) on the thigh when it’s lying on the chopping board, roll it and wrap it in the skin (got that from the chicken butcher at the market) and cook it in the oven. 220C would have been a good temp to start it at, I think, then drop it down once the skin has been blasted to crisp it. Not sure when the parmigiana cheese was added during the process, but I’d think it would be after crisping the skin phase.

I’d have used more ham and butter-fried the macadamias, I think. Well, always next time.

IIRC, this was just chopped into florets, par-cooked in the microwave and then fried in butter. I don’t think we bothered with oven-finishing it that time, no real need.

Hopefully I’ve remembered all that correctly, it’s not a guarantee…

I think one of the ladies, at the Bible study gathering, where we were eating German food, is secretly Keto. I think so because she ate her brat without a bun, she did not eat potato salad, and she brought loaded cauliflower. It had yellow cauliflower cream cheese, diced green onions, bacon bits all over the top, Cheddar cheese,and cream cheese. Yum!
I also brought brie with apples and walnuts.
For dessert she had a piece of brie with walnuts on it… Not the Apple kuchen, or the lemon cheesecake. A closeted Keto girl.
Someone nicely brought berries, and so I had some of them.

I love Sukrin Gold but I have to buy it online. It’s an erythritol and stevia blend with a bit of added molasses. I think it works well as a brown sugar replacement. I’ve used it in chocolate chip cookies and Thai green curry with chicken.

Breakfast - as usual, no rules here. You know that lamb chilli stew slow cooker thing I made up the other day? Just been in the gym and my body was screaming out for food and this needs using up so breakfast it is :joy:

I made my own mayo to go with chicken wings. The mayo didn’t taste anything like the store bought mayo that I can’t tear myself away from, but I’m going to stick with it in the interests of my health. The recipe called for Dijon mustard which I didn’t have any of so I just threw in some raw mustard seeds instead.
