Salad is rocket, avocado and pine nuts. That’s with one of the ‘rolls’ I baked up yesterday using some chaffle mixture in my mini loaf tins, just warmed through in the toaster and topped with goat cheese.
I wrote this yesterday then waited for making a tuh’u pic… But I decided it’s not photogenic at all.
I still couldn’t categorize the fungus… sigh
I have no own photo it but I fried such a thing. It’s a stinkhorn species. We call the young ones “witch eggs”.
It wasn’t bad but it wasn’t good either but I tried it once.
It looked like just this:
We have found 3 various edible bracket/shelf fungus species too. Just a little and one of them (lol, it’s called beefsteak fungus, we call it liver fungus, it seems a better name for me) was still super young I bring the camera and make photos next time. I found some beautiful baby fungi too, extremely photogenic and I couldn’t figure out the species or some other smaller group. It is a fungi with gills, that’s it.

I’d actually ordered a couple of the organic sirloin steaks from Tesco (my Field & Flower bulk meat order is a few days away yet and I’m out of everything), but they got subbed out for these weird little mini roasts in foil trays, with some kind of… buttery stuff on top of them. Not ideal, but I scraped off the stuff and cooked this in the oven as directed. In hindsight, a pan would have been better… they’re not exactly huge xD

It’s one of the ways I try to discipline myself. At my core, I’m a very lazy and chaotic person and I hate that xD So I try to make even little things like a pretty plate habitual. Probably sounds a bit bats, but that’s me all over ; )
Chicken thighs with onion, garlic and garden yellow squash put up in the freezer with lemongrass basil sauce (store bought but decent, not perfect ingredients.

I’ve settled into a routine of sardines, eggs & mayo for breakfast each day - today I was adventurous and added some nutritional yeast
Food during the day (at work) is just pure ground beef, made into burgers of 100g beef each ad I’ll have between three and six of those, depending how hungry I am. Generally not eating after 1pm but on days I feel the need, I’ll have more eggs after work.
Simple and easy.
Made a big Mamma Frittata this evening. That’ll be me sorted for tonight and some of tomorrow.
Looks out of focus, but that’s just all the steam… also ignore all the crap all over the hob; standard practice for me when I cook xD
Made with some cubed pork belly, garlic, asparagus, brussels sprouts, goat cheese and parmesan.
I had OMAD, so wonderful after too many 3-5 meal days lately! I feel myself again now that I have fatty pork and managed to eat a substantial meal… It all started yesterday, I did 3MAD and my second dinner had pork shoulder… I was very well satiated until the next evening so a big enough meal could happened. It was satisfying.
I had this, 5 more eggs in various form and some quark and sour cream. Oh and I tasted my lovely, tender roasted pork too! I only can show the leftovers, I ate the 4th piece except that tiny thing:
If every guesstimation is about right, this latter pic shows my daily energy need in pork shoulder. It looks super tiny but it’s fatty roasted pork for you. Or rather for me, my eyes may look at it differently Even my mouth and stomach can, I am careful with this item since.
As nearly always when I choose my food at least moderately well, I ate until reached about 120g protein and now I am fine and won’t get hungry later.
Looks like a hot mess but is chorizo sausage and eggs with a bit of onion, shrooms and cheese (cheddar and Parmesan). Very filling.
This reminds me that it’s been waaaaay too long since I had a nice bit of chorizo. I’ll have to fix that : )

But it’s pretty to me. Those colors… And all ingredients is something I like. IDK what chorizo sausage is like but I like sausages.

In the US it is ground pork sausage with specific spices that make it “chorizo”. In europe it is slightly different.
When I bought it at the local grocer I found it very greasy - where the meat was drowning in oil when you browned it. Now I get it now from my local butcher and his sausage has just the right amount of fat in it and good flavor.
Local restaurant offers freshly fried pork rinds! And low carb bread, but I just ordered my sammich with regular bread and remove it.
How fatty are your sausages there then? I only saw quite fatty ones in Hungary but the brand seems to matter little (I just looked up many now and I remember all were fatty to me), the soft ones are around 25% fat and the dry ones around 45%. There are semi-dry ones, they probably are in between.
But when I read a recipe and we talked about sausage meat in the actual carni thread, it turned out that it is less fatty elsewhere…
Whenever I make my own, it’s not as fatty as the store-bought ones.
Now that I am here I can show my planned lunch with my lame photo. It’s not about beauty, it’s info… Too bad I mess up my plan even if I assemble everything and make a photo… But I didn’t stray toooo far…
It looks a small meal and while it’s not big, it’s substantial. The meat is fatty, the soup has 3 poached eggs, the quark has sour cream and yolk…
Calories add up and I didn’t need much else (though I didn’t eat everything in the pic just almost) to have an OMAD sized meal.
