What Did You Keto Today? Part IV
Supposedly, this was an April Fool’s joke from last year. But they should totally do it!
How much would you pay for it? It has a lot of meat in it. Might be tough to eat with a spoon though, without it falling all over the sides.
Today’s meal…
Lunch… Made a Italian Sandwich with Ham, Provolone, Hard Salami, Capicola, Swiss and Tomato - And the Wife made me a Grilled Ham and Cheese right after. (I had fooled around making bread last night)
Dinner… 3 - 1/4 lb. Hotdogs with Cheese and I made a sort of Meat Cup with one of my Mini-Springform pans. - Ham, Provolone, Hard Salami, Capicola, Mozzarella, Swiss Pepperoni and Ricotta

Varagheh Kookoo: Persian frittata with eggplant and tomato. Garnished with a mix of fresh herbs and served with a dollop of Mast o Moosir (Persian yogurt dip with shallots). Yum!
BEAUTIFUL … except the BBQ sauce. lol (I am not a big fan of BBQ sauce) Having said that, it looks so good, I just might have to make an exception
Hi Candy. I sent the recipe to you in a message, and hoping it isn’t too jumbled. If you have any questions just let me know. I really think their method makes improvements in areas where I was having issues from other recipes. ATK tends to let the dough rest for 30 minutes before baking.
Lots of good recipes in there. I cut my teeth on learning how to cook with their recipes and techniques. I rarely have failures From their recipes. So I was happy to see the new cookbook and give it a try.
A year or so ago (before keto) DH had bought a spiralizer for me and I never got around to trying it out till tonight. I made zoodles and then lightly sautéed them in some olive oil and added some basil pesto and extra Parmesan cheese to them. The chicken breasts were coated with egg/cream and dipped/coated in a mixture of almond flour, Parmesan cheese, smoked paprika, garlic powder, and salt and pepper and then air fried to perfection. It was so good and I can’t wait to have the leftovers. Never ever thought I’d get excited about zucchini!
I love zoodles! I saute some onion in ghee or bacon grease, toss in the zoodles and season with curry powder. Delicious.
