What Did You Keto Today? Part IV
I couldn’t find chili when I looked sadly. For g-Hughes I could only find bbq Sauce.
Lunch from a little while ago… Made a loaded Italian Cold-Cut Omelette, with Ham, Provolone, Hard Salami, Capicola, Cheddar, Tomatoes and some italian Dressing. It was pretty stuffed and I gave the Wife about 1/4 of it, since I also had some Sausage Patties with it, and a Cream Soda Zevia.
Dinner was bone in pork chop with mushrooms, onion, shallot gravy. I learned earlier that onions are a bit higher carb than I realized so I’m finding out that using just half the amount indicated in a recipe is plenty. Overall, very tasty. Also a side dish of white wine and cheddar cheese Cauliflower casserole. Yum.
Today I tried my luck on another ATK recipe from my new cookbook Easy Everyday Keto and made a Pecan Cinnamon bread. I thought it was a success. Again, their techniques are different than what I’m finding from other recipe authors I’ve tried. 3 out of 3 so far.

I got COVID swabbed yesterday (nasty!) for parathyroid surgery Monday morning, I’m getting ready to go visit my son this afternoon for a Pot Roast dinner. I hope you’re all staying well and more importantly sane!

Got up at the ass crack of dawn (typical Clare style) and beat the covid-19 queues so we could start our picnic at a reasonable hour…was very happy to find these in the random alcohol aisle at Morrison’s… made my day…Had a sugar free chicken korma for dinner…now I’m ready for bed. Happy Saturday everyone!
I guess you could call it that - hubby and I are long-haul truck drivers, delivering mostly refrigerated food products to grocery distribution centers and processing plants. You’re welcome.
Do you have a link for the recipe or site? EDIT: I saw above that it’s America’s Test Kitchen. Missed that before. I’ll just Google it.
We’ve been pretty busy the last few days but have an easy run today. We get the chance to eat something besides a cheeseburger, so I’m getting grilled chicken tenders from Cracker Barrel, which will be dipped in either my homemade blue cheese dressing, or a mx of salsa and sour cream - I haven’t decided which. Hubby? He’s getting a cheeseburger.
Ash, if they carry G Hughes, ASK them to see if they can get the sauces. If the BBQ sauce is selling well, they may take a chance on the others.
This was giving off so much steam that it was hard to get a clear picture. It’s home made broth (so good and satisfying) with pulled pork (left over from a rack of ribs), lose leaf cabbage and shitake and cremini mushrooms (home delivered by the local farmer’s market!) and some walnut pieces. Flavored with coconut aminos and spices and herbs. Will definitely have this again.
ATK has a keto cookbook??? The clouds have parted, and the angels sang…!!!
