What Did You Keto Today? Part IV

food

Devilled egg, mature cheddar wrapped in smoked ham, fermented cucumbers and yesterday’s leftover salad pimped with yet more home-brewed sauerkraut. A delicious lunch on a sunny day.

We’re not eating it in the garden thanks to the proximity of a newly-fledged blackbird. We spotted it in the middle of one of the bird baths (a deep garden saucer) when locking up the house at 9.30 last night - quite extraordinary! We fished it out, dried it off and popped it into the bay tree, without much hope for its survival overnight. Hasn’t got its flight feathers yet - we think it rather jumped the gun leaving the nest when it did. Daddy blackbird found it early this morning and is feeding it constantly - it’s very cute, but we’re banned from the garden today while it gets used to being out in the big wide world.

ALWAYS a giggle, or at least a big smile, in here. Good Sunday Morning (afternoon, whatever, wherever!)!

Have a steak or burger - or more traditionally, get some ground pork, season it up, and have sausage patties. No limits!

That sounds just the thing today!! I already had fried eggs with bacon (woke up ravenous!), but I have a dozen freshly boiled eggs and that’s a marvelous idea for some of them.

Eggs are my favourite food, and I love an excuse for devilling! Opened a new jar of mayo specially (even though I COULD have eked out the dregs of the last one, I went for it - because, well, mayo…)!

Enjoy yours, @CandyLindTX!

So how does Enlightened compare to Rebel?

both? fascinating. I usually commit to one or the other

yeah, not every meal has to be fantastic, is a thing I am working on… :grinning: it can be just fuel and I can go on with my day…
it’s a work in progress for sure…

My foodies for the day…cheese and tomato scrambled eggs

And gammon with veggies and cheese sauce…

Been totally exhausted thanks to my daughter waking up at 4am this morning. Not sure what that was about but I hope it doesn’t happen again :joy: been a bit snackish today because I’m so tired

I’ve made countless curries and started combining Thai and Indian spices a few years ago with great (to me) results. The one yesterday may have been my favourite ever here is what I used…
1/2 onion diced and sautéed in a few tablespoons of coconut oil in the Instant Pot on sauté mode.
Added 3 big heaping tablespoons of curry powder and mixed into softened onions.
Added a can of Aroy-D coconut milk (the best brand imo), full mini jar of red curry paste, an 8 ounce jar of tomato sauce, 3-4 tablespoons of fish sauce, 5 boneless chicken breasts cut into bite size pieces, 1 tbsp of dried hot red chilli flakes.
Stirred it all up then set to high pressure for 15 minutes. Natural release and left on keep warm/simmer for 2 hours.

I have written down Lupin Flour on my list of things to buy next time I do an Amazon order! You do a great job on your videos, you explain everything well, and you don’t seem nervous at all, either!

(Steve) #620

My wife just loves lupin flour now and is developing a cranberry muffin with it. The test batch was bang on yummy. Amazon.ca doesn’t sell lupin flour but low carb Canada does but I see that they are out.
I don’t get nervous filming anymore. I used to get the jitters when I cooked live on Canada AM and other morning shows. Now I’m just dealing with golfers, birds, wind and planes… lol

(Susan) #621

Oh wow that is so cool, I didn’t know that you did TV shows, super neat!

(Steve) #622

I also filmed 50 episodes or so for 3 years on a fishing show in Florida, too much work. I really like what I’m doing now because it’s super keto and I get to motivate people to hopefully change their diet.
