Sweet Cornbread Muffins Keto
11.3 carbs in the whole recipe
Ingredients:
4 eggs or 3 extra large
2 Tbsp. full fat sour cream or Greek yogurt
1 Tbsp. melted bacon fat
2/3 cup sifted almond flour
2 Tbsp. fine lupin flour (lupin flour gives it the cornbread texture)
2 Tbsp powdered erythritol
½ tsp. salt
1 tsp. baking powder
1 tsp. vanilla
½ cup miniature canned corn, puréed
Directions:
Preheat the oven or grill to 350 degrees.
In a medium bowl, whisk eggs, bacon fat and sour cream or yogurt.
Add almond flour, lupin flour, erythritol, salt, baking powder and vanilla. Mix until smooth.
Stir in a half cup of puréd miniature corn.
Spoon cornbread muffin batter into well greased muffin tins (I used bacon grease).
Sprinkle a little powdered erythritol over the top of the cornbread muffins (optional).
Bake sweet cornbread muffins for 15 - 20 minutes or until golden brown.
Main course a chicken curry with coconut milk, Thai curry paste, Indian curry powder, onion, tomato sauce and sliced jalepenos

Made a keto pizza - crust is the same recipe as the bread I made with oat fiber, flaxseed meal and vital wheat gluten.
Hubby liked it. I wasn’t crazy about it, although I like the bread. I ate half a slice then scraped the toppings off and ate those
Pork chop marinated in a Greek style marinade, tzatziki, roasted tomatoes and mozzarella, and roasted veggies
Dinner… Top Sirloin Steak and Salmon, along with Broccoli with Cheese, Pepperoni, Cheddar Cheese, Pickles and Olives.
Saturday OMAD (with a twist):
24oz Ribeye salad w/ homemade avocado mayo.
The twist, as you may have notice, is that I am loosening the carnivore a little. I like to change my diet when I find that I am stalled or just at different times to make sure I keep the body guessing. I will be introducing some veggie and other misc carbs for a while. I am also considering splitting the calories between 2 meals a day (same calories, just TMAD).
Steve, do you drain/squeeze this super dry, like @Fiorella does in her tortilla chip recipe, or do you just drain the water off the cobs and leave the rest of the moisture in the purée?
“Come on, baby, let’s do the twist!” I, too, think it’s a good idea to twist things up occasionally. When I was working on weight loss and hit a stall, making a change usually got me going again. Often, it was a temporary increase in volume/calories.

Everyone eats a lot of processed foods on keto bacon, ham, sausage , corned beef and salami. I love eggs but need a change for breakfast avoiding processed stuff🤔
The corn is dry as you can see, I purred just the corn (no liquid) with a stick blender into a paste. The baby corn has a very earthy taste and really adds to the cornbread texture.
Miniature corn has only 2 carbs per 1/2 cup.
