What Did You Keto Today? Part IV

food

#402

Dinner tonight… Some Turkey from yesterday (with Mayonnaise), Brisket the Wife cooked today with a little A-1, along with some Pickles, Olives and Cottage Cheese. Also a bottle of Almond Milk.

I should try subbing tomato paste in the Big Mac casserole for the mustard - thanks to you and @cervyn for the idea!

#404

I googled a few non-keto Big Mac sauce recipes, they vary a little, but they are all copy-cat  It’s probably just like with ketofied recipes - “tastes just like the real thing” usually means that it doesn’t  You can definitely play around with subbing mustard, adding real onions instead of powder, etc

You guys inspired me to make the Big Mac casserole again, which will be dinner tonight and the rest I’ll freeze in small batches for quick freezer meals.

Chicken with sour cream and hot sauce, chaffle, pickled veggies, pickled peppers, olives. I stocked up on pickled veggies of all descriptions, since procuring fresh ones has become more difficult. This was going to be OMAD, but in the afternoon, when I made the chaffles, I ended up eating an open faced chaffle with sliced boiled egg and mayo. I lost yet another pound. I tend to lose that way, nothing for a month or two, then almost a pound a day. I feed a stall, because I want my metabolism to stay intact and that makes the most sense to me, and it works for me. 87 pounds down, shooting for 90 this round.

She isn’t usually in the picture, but she is always supervising my prep. During prep, scraps of meat and fat make it into her dish, and the ratio of kibble versus meat keeps tilting in favor of meat. The result: Happy dog and shiny fur!

Finally got my vital wheat gluten in and made the bread @FishChris makes.

Pretty good!

My toaster oven is packed up and the light is out in my oven so can’t watch the bread toast… so I toasted a couple of slices in a pan on the stove with some butter.

@ClareBear OK you talked me into it… :joy: Whoops, found those half price absolute black Easter egg things too… :face_with_hand_over_mouth:

Dinner from the freezer and
Seafood chowder

Wife did a meat run yesterday while I was working. (Store finally opened back up) She picked up a whole NY Strip Steak (Cut to 1/2 " in thickness, since her and my Son like the NY Strips better and thinner) And she picked up 2 Whole Top Sirloins, (Cut to 1" since I like mine thicker) Size is hard to see in the images, but the Top Sirloin are three plus times larger then the NY Strips, but it was getting late and I was tired so left most of them full size this time, only cutting a few down to smaller portions.

NY Strip Steaks…

Top Sirloin…

Looks great ! Glad that worked out for you. Do use a bread machine, or a mixer ?

We use a Kitchenade mixer, and my GF keeps complaining that I’m going wear it out. I told her, if it breaks, I’ll buy a new one. What’s the problem ?

(Dirty Lazy Keto'er, Sucralose freak ;)) #418

Oh okay… your just storing it that way. Do you Sous Vide it later ? {the ONLY good way to cook beef, BTW ;)}

Sweet  Is she a Great Dane ?

So, when can I come over for dinner? Don’t even think about using Corona as an excuse…

(Jane) #421

Kitchenaide mixer. I only changed out the cups of hot water 3 times, not every 10-15 min like he said in the video. I started with a cup of boiling water then changed it at 30 min, hour and hour and a half. At 2 hours it had risen nicely!
