Got a little inventive with this one, doesn’t look special but omg was it delicious!

Strawberries and cream pulled pork with horseradish coleslaw.

Marinaded pork shoulder with strawberries, red wine, rosemary and cream cheese pureed - 24 hours in the fridge.
Dried it off, salted and more rosemary, tossed it in the sous vide for another 24 hours.
Strained the juices from the bag into a pan, added some strawberries, cinnamon, hwc, cream cheese and salt to taste. Let it reduce down and finished the sauce with a pat of butter.
Horseradish coleslaw, is just chopped flat cabbage, 1 tbsp horseradish, 2 tbsp avacado Mayo, salt and pepper to taste.

I’m definately going to do both of these again! (Besides the leftovers lol.) They do go really well together too! The spicy crunch of the coleslaw with the slightly sweet & savory pulled pork. :drooling_face::drooling_face::drooling_face::drooling_face:

I would have taken a photo, but by the time I got back in the house from working on the Garden, she already had it all cut up and ready for serving. It was a big Turkey though. Think she cooked it 6 or 7 hours? Was quite good and I’m looking forward to a nice Turkey and Mayonnaise Chaffle tomorrow. :slight_smile: As well as some Turkey Salad in the days to come. :yum:

Followed the recipe apart from garlic and onion powder as I couldn’t get any, added chopped garlic instead, also added oregano as I tend to add that to everything.

If I do it again I’ll use less mustard in the sauce as it’s too strong for my liking, not a mustard fan at all but wanted to do it properly the first time.

Confused I am… the info for the Big Mac casserole contradicts itself. I’ve used the dill pickles in both sauce and mince mixture.

I thought the mustard was a bit too strong also and was surprised it didn’t use low sugar ketchup which would be more like the Big Mac sauce.

Emptying my fridge, so there is a nibble plate: Salami, corned beef, bacon wrapped ground beef with mayo, avocado, olives and pickled mushrooms.

I have noticed there are places where it is quite hard to find sugar free ketchup so perhaps that is why? It’s pretty easy to find mustard with no sugar. (and personally I only want sugar free because tomatoes are fruit and are plenty sweet for me) However I agree they are two totally different tastes, I mean why not add a squeeze of tomato paste, vinegar and spices to replicate the ketchup? LOL
I may have just talked myself into making this this week instead of shepherds pie… I have always disliked pickle relish as it is always sweet. I have always like my pickles sour. (even 20 years ago when I still ate tons of sugar!) fun discussion

Actually, I have come to like the flavor of pure tomato paste as condiment. I now prefer it to ketchup.

I cooked a roast dinner today…my first time doing roast potatoes too…I didn’t have any but I hear they were a success! Just roast chicken and cauliflower with cheese sauce…and a rare sausage sighting :joy: I picked them up from the butchers…they were gluten free so I thought why not! Scrummy!

Well done! Aunt Bessie always helps me on the rare occasion they’re eaten in this house. I never have them and Richard only eats 3 or 4 when he wants them so sod that amount of work :joy:

Easter dinner at our house was uncured no sugar smoked ham, loaded cauliflower mash casserole and cucumber avocado salad with lime, mint and feta. I’ll link the salad recipe below. I sub avocado oil for the olive, per my taste preference. Had to put the cauliflower mash in portion control ramekins, as mashed cauliflower tends to get real carby real quick.

Then, since I don’t get chocolate bunnies anymore, I made some dark chocolate ice cream from Carrie Brown’s ice cream cookbook. If you’ve got the equipment and the patience, these ice creams really are better than anything you can buy in a store, Keto or otherwise.
