Cor that looks fun! Happy Easter

OMAD - with the exception of a cup of plain, salted broth in the afternoon: Shrimp dipped in butter and sprinkled with lemon juice, and a mixed salad with some tuna and chevre. Delicious. I am on a roll, weighed in at 234 this morning. 86 pounds down. Do I hear 90?

Thanks, Aimee! You too!

Aww that’s so lovely!

Looks like the ingredients for a perfect afternoon!

Fabulous news, @velvet! Congratulations!

Omelette… With Fried Spam, Pepperoni and Cheese. Some more Spam on the side…

(Jane) #366

I chopped up dill pickles

Totally keto Easter dinner. Turkey, dressing made from almond flour, Brussels sprouts with bacon and pecans, and (lazy) Green Giant cauliflower mash. It was runny and I should have made my own. They need to go back to the research kitchen lab!!!

And one of @Digital_Dave SF cheesecakes but too full now so will have for later

Today I had chevre blanc wrapped in parma ham and fried to crispy, gooey heaven, with salad and roasted vegetables.
Followed by

Orange and vanilla frankenfluff with raspberries and cream.

Totally not “Easter,” and totally not fancy :joy: but at this point I’m trying to ration food appropriately and use things I’ve had sitting in my freezer for a while :woman_shrugging:t4: chorizo and greens sautéed in brown butter

I have a big Turkey in the oven, and the house smells wonderful. I am going to be peeling the potatoes and getting them on the stove shortly for mashed potatoes. I will be making gravy, stuffing, and a bag of frozen vegetables (as the only fresh vegetables we have left now are potatoes), and we have a Chocolate Pizza Pie thing I bought at Walmart for them all for desert.

None of the family is Keto, so they are all thrilled with that meal --I will be having the Turkey and a bit of the vegetables – not cheating =).

We did a really fun Easter egg/candy hunt for my grand daughter, Gabriella, this morning and she had a lot of fun.

Congratulations, Velvet, this is great =).

That is so sweet of you, Jackie, I am sure that they were delighted and thoroughly enjoyed the food. Everything you post always looks so delicious, and your presentation is always so elegant =).

My oven light is out and I accidentally reset the timer for my cheesecake when I heated up leftover quiche.

I had to keep opening the oven door to check in it (not good) and overcooked it a bit. Still delicious! Topped with SF strawberry jam

OMAD sausage, cremini mushroom, asparagus bake with smoked cheddar. Ate two big plates!

Wow, you miss a couple of days and WWIII breaks out! LOL Seriously, I am so glad @Jody22 and @Ruina talked it out and settled things like adults. We have lost some great personalities in the past over things that I thought never should have happened, and I love ya both (and everyone else, too!). Everyone just needs to KCKO (especially now!). NOW AS FOR THE FOOD …

I had to think about that for a while! And extrapolate as I read further! LOL

Glad to see you lurking!

I have GOT to make some frankenfluff!!!

Nothing better than left over turkey!

My pics are never up to snuff, but by George, I’m gonna post anyway - when I remember to take them! Today, I ate a chafflewich for brekky. I’ve been rummaging through my freezer, trying to use things up so they don’t go bad, and I had some things in the fridge side to use up, as well; so I made a 6-qt stockpot full of “leftover soup.” I sautéed celery, diced radishes, minced onion, basil, parsley, salt & pepper; added 3 quarts of commercial broth & some chicken & vegetable bouillon. Then I tossed in green beans, cauli-rice, kale slaw, spinach, roasted radishes, okra, sautéed mushrooms. Most of that was leftovers. Protein was leftover turkey & some pulled pork (weird but it works). I forgot to take a pic, but it doesn’t look too bad for a bunch of veggies. I’ll try to remember a pic tomorrow. I am quite a zombie today after severe storms overnight (weather junkie here). The great news is that hubby only had a short work stoppage and has the big wheels rollin’ again!

Now, I have about 100 more posts to catch up so if you’ll excuse me, I’ll put my bib on …

I’m emptying my fridge too, I want to place an order at the supermarket next week, for delivery. I won’t do that too often, so I want to buy a bunch at once. I may end up making some Goupe de Melange (throw everything in a pot or casserole) or a series of nibble plates.

(Jane) #379

Shredded cabbage, sausage and Rao’s marinara topped with whole milk mozzarella

Nothing wrong with a little crunch on Cheese Cake. :+1: … With everything going on, this is the first year we didn’t go over our neighbors place, since they are doing social distancing. But I still made them a Cherry Cheese-Cake Friday night that V took over to them. I also made V a Chocolate Cheese Cake yesterday as well. Though I haven’t partaken with any of it myself.

Worked 5 or 6 hours out in the garden today, doing a 2nd full depth till. (Back’s hurting a bit though, after working in the yard all day yesterday and then today) … But V made a 27 lb. Turkey today, along with some Cauli-Egg Salad. I added some Pickles, Olives and some Brussel Sprouts for dinner.
