What Did You Keto Today? Part IV
Hi, guys! It’s been crazy lately. I’m getting a treat today, some keto ice cream - Rebel Triple Chocolate. Here’s how I make it fit in my miniscule freezer.
We only get 3 flavors of Rebel here in BFE Arkansas - mint chocolate, cookies and cream and peanut butter fudge. At least we can GET it for my hubby’s sweet tooth.
We were in Houston over Thanksgiving years so naturally hit up the local HEB and nearly cried when I saw TWO ROWS of Rebel flavors!
Don’t think I’ve added it to my Recipe thread, but will do so tomorrow & insert a link here after I do.
Tonight’s Dinner… Sous Vide Top Sirloin, Cauliflower in Butter and Brussel Sprouts.
If you don’t see what you want in Rebel, try the Enlightened Keto. It’s actually our favorite (although this triple chocolate floats to the top occasionally).
@CandyLindTX … The Wife never took any pics like I do, but she said she got the idea from a recipe she happened to come across one day. She thinks it was some type of Jambalaya? … She didn’t use the recipe itself, but used it as a guide to start with. … She starts hers with Chicken Broth, added in to the slow cooker. Then places in some cut up Chicken, Shrimp and Italian Sausage. She also adds a little Rao’s Sauce for flavor. She puts in Scallions, Celery and whatever spices you like. She said the original recipe called for a lot more stuff, including cayenne pepper, which she doesn’t like peppers. So she keeps it a bit more basic, but it actually has a nice taste. Plus, I like mine quite meaty of course.
Basics used for this overall…
- Chicken Broth
- Chicken
- Shrimp
- Italian Sausage
- Rao’s Marinara
- Scallions
- Celery
- Spices to taste
(We usually use the regular Sea Salt, Pepper, etc. And it would probably be nice with more stuff, like Mushrooms, Garlic, etc. But she doesn’t like Mushrooms, so I can always have some on the side.)
Dinner… Top Sirloin and Fried Mushroom put on a Salad with Sour Cream, Cheese and a little A-1. Also had some Brussel Sprouts. And since we’re putting up Christmas lights, the Wife picked me up a Cookies & Cream Rebel, which will also help with working out in the cold!
Today was a big cook day. Cauliflower casserole ×7; Hamburger stew with mushrooms, blue cheese and green beans x6; Ginger chicken and broccoli x6 ; and this beef stew with 1 carrot and rutabaga instead of potato. x6
Lunch & probably OMAD? … Big Salad with Rotisserie Chicken broken up on top, along with Scallions, Feta Cheese, Blue Cheese, etc. Drumsticks & Cottage Cheese on the side. (Gave thighs to the girls)
We also usually go out to dinner on our Anniversary, which today marks 34 yrs. But we have also been hearing of quite a bunch of new Covid cases uprising in our area, so we have elected to forego dinner at this time and will just do something later. … Plus, we still need to finish putting up the Christmas lights, so will probably just stay home tonight. … Happy Anniversary Honey!
