What Did You Keto Today? Part IV
Thanks, it is pretty yummy. … The Wife actually tried some new techniques with this one, first slicing the Cabbage up into 1/4" strips, opposed to boiling it all and then laying all the leaves out flat. (With the thick veins removed) - She wanted to see how it would come out this way, or if it would indeed make a big difference. But came out pretty much the same and might even be easier without the large leaves pulling out from the rest at times while eating. - She still did it in layers, even adding the Ricotta directly into the Meat this time, instead of making them their own layers. So this one was sort of a tester.
Salmon version 3: Salmon Mousse ( very simple, quick recipe: https://www.marthastewart.com/316543/salmon-mousse) , Russian eggs (hardboiled eggs, Mayo and caviar), olives and cucumber slices. I picked up an inexpensive large jar of basic caviar, it goes a long way and I love Russian eggs. The Mousse was very tasty, tasted light but was very filling. The recipe can be made with smoked salmon, canned salmon, or fresh cooked. Mine was the latter, marinated in lemon juice and Avocado oil. The crunchy cucumber made for a nice cracker.

Gratuitous bonus photos of choppy waters out by the lighthouse on my morning walk:
Ate a piece, ok, Big Piece, of the Cabbage Lasagna the Wife made last night… And a Grape Zevia.
Forgot to add Parmesan Cheese…
Not so sure about the quality of the pictures, but I’m sure enjoying the food. It’s all fast and easy to make.
But isn’t the chocolate totally inedible due to the sugar? Or do you still need that sweetness level sometimes?
I am on low-carb since almost a decade and cutting out sugar quite quickly lowered our need for sweetness. My SO eats lots of carbs, lots of sugar, just not normal table sugar and he experienced the same. We can’t enjoy store-bought chocolate all alone (the one with maltitol is an exception for me as I don’t feel maltitol particularly sweet). I’ve read such things from zillion ketoers during the last years…
I ate honey this year, it’s awesome but insanely sugary so I need quite a big amount of unsweetened chocolate around it My unsweetened chocolate is often good enough to me but I can enjoy a sweet type sometimes. 10-15% sugar (or sweetener giving the same sweetness) is probably fine to me but 50%? It’s so surreal to me that anyone can eat that (and then I remember the times when I ate table sugar or honey with a big spoon, alone… not often but it happened).
Eating a tiny amount helps a lot, though. That’s how I drank my old fav wine with its 20% sugar content.
Nice dishes and photos, folks, I enjoy them! And still have no own. I have egg stew now, not particularly pretty or interesting… But not boring as we didn’t have it since ages and it has tasty ingredients.
I wouldn’t say I need that sweetness level, but I definitely still enjoy it. And when I’m only eating once every five days, I can get away with it and still have very high ketone levels (GKI < 1) again within a few days.
I cut strips of zucchini, cooked up some hamburger, with spicy tuscan tomato to stuff into the zucchini with a shell-like form with a toothpick, some ricotta, sharp cheddar and sprinkled mozzarella on top.
Let me tell you it was banging. The only bad part is the spicy tuscan tomato sauce costs around 5 dollars a jar. It’s low carb, no sugar added and tastes fantastic!!!
