Cook 1lb ground beef. Remove the meat and in the rendered fat sauté onion, mushrooms and spinach. When they are done, add the meat back w/ shredded cheese to melt and mix. Added some everything but the bagel season on top.

Dinner earlier… Forgot to post it. Dungeness Crab from last night and the Wife made some Bacon.
I don’t usually indulge in keto treats, but I’m at my son’s house and wanted to share this with him and his wife. I cut back on the amount of sweetener only because I’m used to not eating sweets anymore.

Thanks, Karen. It may not always appear like it to some, but I do try. I guess at times some may say I might overdo Proteins somewhat, but I do try to keep carbs under 20g regardless of the meal. (But do try to mix things up too) But when it comes to things such as Almonds, Seeds, Yogurt, Cottage Cheese, etc. I will measure those, since they are easy to overdo. But most other things are easy to add up.
Sausage, Bacon, 3 Boiled Eggs, 4 oz. Cherry Tomatoes, 4 oz. Greek Yogurt, Grape Zevia and Iced Tea.
Also had 1oz. Almonds, and 30g Sunflower Seeds and Deviled Ham for some added Salt.
It’s so bad today, I actually typed this up about 10am, this morning, and between having a room full of folks in my office followed by a field site review, I’m just now getting to hit ‘Reply’ … Not to mention, I never did get to the Almonds and Sunflower Seeds, so will be eating those now… at 1:50pm.
Wife was saying the Ice Cream and Macaroons look good, and wanted to know if you had a recipe for them?
@Digital_Dave So happy you guys want to give the ice cream a try. I truly rank this one in the “extraordinary” category as far as flavor goes. I’ll also link to the types of chocolate ingredients I used as I think it has an impact on the overall flavor.

As far as sugar goes I used Becca Sweet and Lakanto classic. And the vanilla is from Costco. I didn’t have any opened almond milk so I subbed Macadamia nut milk instead (from Costco). I also forgot to add vodka although it seldom makes any huge difference in scoop ability for me. After the first day in the freezer I had to leave it out on the counter for about 20 minutes to soften.

This recipe didn’t turn out quite right For me. These were a bit too dry to eat on its own, but wonderful in the ice cream. I suspect I didn’t use the correct type Of coconut suggested in the recipe. I matched the ingredients list, but either the brand I used called it something else, or the recipe writer had something else in mind. I noticed the Metric weight was not right when I measured it out and compared it US customary. Next time I try making the coconut macaroons I might experiment and try soaking the coconut and rehydrating it to see if it makes a difference.

3 home smoked Chicken Thighs. Later tonight I will have a pint of Rebel Mint Chip “Ice Cream” to get the fats and calories up. This is one of my favorite meals!!
*The dark color under the skin of the chicken is the seasonings. I pull the skin back and put the seasoning in so it gets on/in the meat.
