Funny you should say that! I DID butter them, ground in pink salt, then picked up the pepper grinder, only to encounter zero resistance! I am OUT of pepper. Not even a few peppercorns in the spice cabinet. :flushed::roll_eyes:

Long day at work but I’m out of leftovers so I cooked up some Ham steaks, eggs with pimento cheese, and bacon. Couldn’t finish it all. Pretty much my only meal today outside of the cream in my tea

I don’t get too panicky about the “unhealthy” oils occasionally, either, but I DO watch for sugars because I’m such a sugar addict. The ones I saw had added sugar - maltose, maybe? Dextrose? I don’t want to tempt the monster to come out of hiding.

Best. Soup. Ever. And so ridiculously easy.
Pork shoulder. Onion. Chicken broth. 1c verde salsa. Simmer until pork is tender, ~1.5 hrs.
Top with chopped fresh cilantro and fresh squeezed lime. Also, extra toppings of shredded cheddar cheese and sour cream are good. This was so good we’ve made two batches this week. The 2nd batch we used chicken thighs and gizzards cause that’s what we had in the fridge. It was just as good.

I think you like Tom Yum? You’d probably like this. The fresh cilantro and lime and verde base are SO good. Granted, I have a favorite store bought verde salsa which is key, to really love the salsa you use. Also could use homemade if you have it or have time to make it. :grin:

@KBG It’s a soup version of Chili Verde, looks good. I make taco salad sometimes and put half a bunch of cilantro in the lettuce mix, Love the stuff. I have made Chili Verde many times, fire roasting the green chilies, onion and tomatillos in a cast iron skillet and cooking with pork butt. I’m going to make some soon. :cowboy_hat_face:

So, I decided to eat some granola that I made and I was reading the ingredients and damned if it put me over my carb limit. I got the recipe from Carrie Brown’s page and it makes me mad that she mixes the low carb, keto and paleo on one site. Have Mercy! Now I don’t think I can have lunch or dinner unless its meat. I have fish for lunch so I can have that I guess.

Thus was last night’s supper. Pork chops make feeding 5 kids so cheap and easy.

I’m fasting today, b/c I have PTSD involving bad storms. We have some gnarly storms headed our way with probable hail and tornados, and I don’t want to eat everything I touch.
