Are those Outer Aisle sandwich thins? They didn’t hold up as well as I’d like, but they’d be good for some things. Pizza crusts are next. I have some Cali-Flour frozen pizza crusts but haven’t tried them yet.

Blackened Cheddar Stuffed Meat Loaf

This was a complete improv in the kitchen. I started out mincing a strip of frozen bacon to add to ground beef for burgers. Then I found some ground pork in the meat drawer and put that in too. Added worcestershire sauce, realized it was turning into meatloaf so I went with it. I decided to blacken it while it was baking. :man_cook:t3:

This was a delicious salad that my son got to eat, I just had meatloaf. :confused:

But it was delicious! :cowboy_hat_face:

Got home late from work but still fried up some ham steaks for us. I also ate leftover bacon because I can’t go a day without it now, it’s become a thing. Took me awhile to find a ham steak not loaded with carbs, what’s up with that? The boars head ones have 2.5 per steak

@Acnickel The only really low carb ham is country ham. Zero carb that is! It’s dry and different to cook with. You have to soak it to get some of the salt out and rehydrate. It’s still salty, the drippings from frying it usually end up as Red Eye Gravy. That’s got coffee in it. Or Country Gravy if you add flour and milk.

I really hope I can find that in the store around here because I’m starting to have a ham/bacon thing.
I also had no idea red eye gravy had coffee in it, I thought it was just spicier pepper gravy. Kind of miss pepper gravy, I’ll have to research how to make it. I think a keto fried chicken with pepper gravy would make an epic meal

Country gravy: I would think you could use cream and glucomannan powder as a thickener. Maybe use some pan drippings or bacon grease for more flavor.

Here’s one recipe from the diet doctor website. You could omit the lemon zest, lemon juice and nutmeg. Then increase the pepper.

Or this one:

Omitting the garlic and adding fresh cracked pepper.

I decided to make use of the bottle of MCT oil sitting in my cupboard and make a mayo with it. Not convinced I’m afraid…it didn’t taste bad at first but left an aftertaste I’m not fond of. I mixed it up with tuna, doused it in salt and added avocado and olives for lunch! I’ll be sticking to olive oil and coconut oil blend in future!
