Dinner was so good! Salmon fillets, pak choi, cherry toms, courgette, a piece of keto garlic bread and then covered the lot in garlic butter!
Dinner: seared scallops with capers, Dijon dill, lemon wine reduction, on mixed garlic greens
Ooh ditto on the lemon during Spring. I’ve been craving extra lemony water. Going to have to make something like these lemon things. Both photos look yum.
The ribeyes I bought were at least 2 inches thick and when they’re that thick they never cook evenly using my usual cast iron pan under the broiler method. So, I took a rolling pin to this one before cooking. It ended up just slightly over-cooked, because the stupid smoke alarm went off right when the timer went off, so the dog then started running around hysterically barking, and I wasted a minute waving a towel at the smoke alarm and opening a door. I don’t like my steak super rare, but this is beyond medium. Not horrible though.
Oooo baby! Not sure to what degree I can duplicate this as we appear to be in different parts of the world, but lord knows I’ll try. So my cup of tea!
Do you make your own queso fresco? If so, any hints?

One of the things I’m enjoying about keto – and marveling at as it’s SO different from pre-keto days – is how I can look at or think about something ‘decadent’ and how yummy it is, without literally craving it. While I get it that the meal you’re showing is NOT ‘decadent’ for us (oh joy!), I’ve noted that even should I think of something like, say, tiramisou, or a stretchy, gooey lasagne, I can remember and enjoy the thought without those salivary glands kicking in and making me goofy. Is this wonderful or what?!

Cheese is so inexpensive in the States that I put all my effort into the rest of the meal. See if you can find halloumi, or queso blanco cheese. It’s fun to play with. Slice it about a 1/2" and fry it till it gets a crisp golden crust. As for the molcajete meal add what is local and flavor with Mexican spices, pork belly, lamb, rib eye, shrimp, chorizo sausage, chicken thighs. Now add a little keto friendly grilled veg like a grilled plum tomato, peppers, onion wedge, jalapeno poppers. Lay it nicely in the smoking hot molcajete lava bowl and pour a homemade green sauce all over everything. Don’t for get the fried cheese. Serve with lettuce, lime avocado sour cream etc…
If you can’t find a molcajete lava bowl on Amazon in your part of the world how about a 500 degree cast iron pan on a wooden board? It’s a fun meal for sure! I have saved up enough different meats in the last couple of weeks to have molcajete tomorrow.

This was yummy! Leftover salmon with spinach and ghee, some mortadella and a slice of toasted keto bread topped with some butter and cream cheese! I left the mayo out of the fridge so it melted a bit but was still nice
My favorite cold cut, especially with the pistachios in it. Used to poke them out as a kid. Youth is wasted on the young.
word sistah I agree with both comments… now i even love mortadella with olives, i couldn’t stand olives as a kid
Bearnaisse sauce. No cheese today. But there are mushrooms and onions.
And yes, the shift in food thoughts is wonderful!
