What did you Keto today? Part Deux!
Celebrating my mum’s birthday with family today - so that means there’s lots of sausage rolls and cake floating around. I’ve kept it keto with my lunch I made earlier…my ugly burger cups, rollitos, cheese and olives! I’ll just keep on munching on my dark chocolate and cheese!
Hungry this morning. Had some of my keto cereal I made a few weeks back so that I can make more with coconut flakes instead of shreds soon
Lunch today. Turned a pork belly into burnt ends in my smoker. Perfect Lil pillows of fat and pork. Made a keto bbq sauce for these Lil guys.
I’ll be glad when it warms up enough to use my smoker again. It’s a smoke metal box with the propane burner and water/wood chip tray and since not insulated it has trouble maintaining temp when real cold outside.
My 1st keto pot roast, omitted potatoes and any kind of thickening agent. Placed it on a bed of cauliflower rice. It was amazing! Hubby made keto mug bread to go with it

This was my first experience eating shrimp in over 22 years. I remember liking it but I had some struggle with this that I didn’t have with tuna salad. They are so …chewy. That was had for me to swallow…Literally.
I also made wayyyyy too much sauce and had to add broccoli in too along with the zoodles. I’m thinking shrimp Alfredo might not have been the best choice for me to reintroduce shrimp into my life. I’m sitting here a bit traumatized from it. Boyfriend says it was good though.
After being called while dressing, that I didn’t have to work through the night after all, the Wife made a quick dinner. … Turkey left-overs, along with some slow cooked Gizzards, Asparagus, Pickles & Olives.
Shrimp and clams can be “rubbery”. Maybe chop up very fine so your teeth don’t have to mash it up since you aren’t used to it?
Perhaps soft baked fish would be easier. This is my favorite baked fish recipe - even before keto - no mods necessary. Can use any fish you prefer.
I call this, the “I am too lazy to really cook because I am sick with another cold thanks to my sick clients coming to Day Program, Dinner”.
I took one pre-packaged Broccoli and Chicken Alfredo bowl(no rice or starch…just broccoli and chicken breast) and added 1/3 cup shredded pizza mozza and 1 tbsp real bacon bits.
